Young green almonds
Green plums
Cherry plums
Brine
5 cups water
2 Tbsp. Salt
3 Tbsp. White vinegar
4 Tbsp. Sugar
1 tsp. MSG optional
4 cloves of garlic
6 red chili peppers
Pepper sauce optional
2 Tbsp. Chili powder
2 Tbsp. Roasted rice powder
4 Tbsp. Padek (Lao fermented fish sauce) or just regular fish sauce
if sauce is too thick, add some water

Please stop making excuses for using MSG. Every single cooking show, the host always say it is optional. If you use it, use it. Don't treat it like it is something terrible bad. Be pround of it. Once you say the word optional, It come across as you are embarrassed about using MSG. Like making pa dek, you don't say the fish is optional because some people don't like the smell or making when making jeow bong, you don't say the hot pepper is optional because some people can't eat spicy food.

I agree with the fact that we don't need to "make excuses for using MSG" since there's little to no actual evidence about the negative impacts of MSG. However, people say it's optional because it IS optional. Your comparison to padek doesn't make sense because MSG is NOT an essential ingredient for pickling things, while fish IS an essential ingredient in padek.

@@thegoat5409 I disagreed. MSG is used in most dishes and essential in all house hold. Especially if you are not westernized.

If you watch the amount of MSG I use in all my recipes, you will know that I use it proudly and definitely not embarrassed at all to use it! I always say it's optional because some people don't cook with it at all, therefore the MSG can totally be omitted from the recipe. 🙂

@@KrazyKATRecipes I understand. It just came across as being a little guilty using MSG. If you use that excuse to say optional then you should say the same to other ingredients also. There are people that don't use some of the ingredients you use.

Water and salt is a necessity when it comes to pickling. MSG is an option. You must not know what the word means. Btw...fish is a necessity when it comes to Pe Dek. It wouldn't be Pe Dek without fish. Its like saying here's a cheese burger, but the cheese is an optional. Don't call it a cheese burger then.
