“Youluly” serves dishes using so-called “Gibier”, fresh vegetables and fish harvested locally in Miyama-cho, and wild game meat such as deer and wild boar. Her husband, LEO, had experience training at a long-established French restaurant in Kyoto, and his wife, YURI, worked as a chef at the Nikko Hotel in Osaka.
For example, the deer thigh meat is sautéed with natural maitake mushrooms from Miyama and then roasted in the oven. The soft deer loin is eaten in a maple pot. What UMESAO is working on in such Miyama-cho is an activity to "reduce and effectively utilize animal damage." Mr. Umesao and a local childhood friend established a gibier association called “ICHIMOUDAJIN”. They catch, butcher, butcher and sell the meat. According to UMESAO, most satoyama areas in Japan, not just Miyama Town, are suffering from animal damage. In order to reduce such problems, animals are used as gibier. And I believe that someday, if venison and wild boar meat are chosen in the same way as beef, chicken, and pork, the scenery of Satoyama will change.
