Lamb tagine

Ingredients
- 1kg of lamb shoulder or leg, cut into 2cm cubes
- 2 tbsp Ras el Hanout (spice mix)
- 1/2 tbsp ginger powder
- 1/2 tbsp turmeric powder
- 1/2 tbsp black pepper
- 1/2 tbsp salt
- 2 tbsp unsalted butter
- 3 tbsp honey
- 3 tbsp olive oil
- Pinch of saffron
- 2 onions, sliced
- 1 tbsp cinnamon powder
- 100ml water
- 100g dried apricots
- 100g prunes
- 100g pistachios
- 100ml water
- 1 tbsp honey
Method
1. Start by mixing the butter, oil, Ras el Hanout, ginger powder, turmeric powder, black pepper, salt and honey.
2. Once well mixed, add the lamb and massage all the marinade in. Leave this in the fridge for 2-4 hours.
3. Place over high heat and seal the meat.
4. After 10 minutes or when the meat is starting to brown, add the onions and water.
5. Cover and cook for 1 hour on low heat or until the lamb is tender (shoulder will take longer than leg).
6. In a separate pot, add the apricots, prunes, pistachios, water and honey.
7. Over medium heat, bring this to a simmer and cook until the water has become syrup.
8. Once the lamb is cooked, arrange the fruit on top and drizzle the syrup.
9. Serve with couscous.
10. Enjoy!

I'm from Morocco, where the lamb Tajin is from, I'm must say you have a special way in making it! But it is eaten with bread not couscous. Saying this, you are a great chef, welcome any time to Morocco.

Heck ya man! Cooking is so fun and enjoyable. I recommend getting beef stock and chicken stock seasoning, and adding it to your water for noodles and rice!

@@DimT670 Tagine is the name of the clay pot, but also the stew cooked in it. It’s eaten with bread. You dip it in the sauce and top it with the meat. Couscous is a pasta used for a specific dish called couscous. It’s not a replacement for bread. Recipes exist for a reason, if you deviate from the traditional technique, then call it something different: a derivative/non-traditional version. I commend him for trying and getting some of the tagine right. He just missed the mark at the very end by serving it like Italian food.

When I was young, our church had a man as an evangelist in Morrocco and when he came home every 5 years he'd have some of us girls fix a Morroccan meal. Of course, he was there supervising us every step of the way. But it's been so long and I've been blest to do the same with other countries evangelists visitors, I might mix them up. If I remember right the only thing we had to cook the bread was an iron flat iron type skillet or pancake cooker but he said it'd work ad it did. He'd brought spices with him from Morocco and that sure helped make the meal more authentic. I've had mostly Spanish or Mexican visitors since. So it's a stretch. There's quite a difference between Castillian Spanish cooking and Mexican cooking. My sister was an evangelist in the French West Indies. If I remember right, she said Haiti cooking was different than the rest of the French West Indies.

Funny, I do too. I have a good group and they are adventurous diners, so I get to test all sorts of recipes on them. No where nearly as sophisticated as these dishes, but once in a while I will toss in something unexpected.

i really like your cooking, BUT...as far as i know (and thats how i am doing it as well) tajine/tagine is meant to be a one-pot. i throw in meat, roast it a little without lid (as far as possible, not really gonna get charred in a clay vessel), then arrange ALL the vegetables and fruits on top, layered with seasoning, add a little water, let it cook/steam for about 45minutes on extremely low heat, dump grains on top (ie millet, couscous, rice, what ever), add water and spices again and let it cook for about double the time the grain would take in a regular pot, check if the grains are done from time to time. as a kid i was multiple times in morocco and tunisia and af far as i can remember that was more or less the way they have done it. in the middle of the desert they just dont want multiple pots, fireplaces/ stoves to carry and maintain. edit: everyone is invited to teach me better

I ate lamb tajine in Jemaa el-Fna square Marrakech when I visited this beautiful country and it was absolutely stunning! Can’t wait to return Morocco again and explore places like Agadir, Casablanca, Fez, Rabat and Tangier!
