Ingredients
For the sponge
· 250g butter
· 250g sugar
· 4 eggs
· 350g plain flour
· 1 tbsp baking powder
· 210ml milk
· 2 tbsp vanilla
For the chocolate icing
· 300g icing sugar, sifted
· 40g cocoa powder, sifted
· 20g butter, softened
· 40ml boiling water
· desiccated coconut, to roll lamington in
Method
1. Preheat oven to 180ºC. Line a 20x30cm baking dish with baking paper.
2. Using an electric mixer. Cream butter and sugar until pale and fluffy. Add eggs and mix well to combine.
3. Sift in flour and baking powder and mix well to combine. Pour in milk and vanilla and mix well to combine.
4. Bake for 45 minutes or until a skewer inserted in the centre comes out clean. Cover and set aside overnight to cool.
5. The next day, cut the sponge into 4x4cm squares.
6. Prepare the chocolate icing. Sift together icing sugar and cocoa powder in a bowl. Add butter and boiling water and stir until smooth.
7. Place desiccated coconut in a bowl. Dip each square into the chocolate icing and shake off excess. Avoid letting the sponge absorb too much chocolate icing or the pieces will fall apart. Roll in desiccated icing. Enjoy!
