The original composer wrote each theme for each group of animals in the “carnival,” which is what Jimmy is reciting as part of the performance, I believe that piece you are inquiring about is The Swans. The actual fully composed piece is quite longer. If you’re interested, there’s great performances all over RU-vid, with some putting images of the corresponding animals to their written themes.

Look, classical music isn't often featured on late night. Such high art required some means of acclimating the audience to it. Even if the result was somewhat inartful, I applaud Jimmy for taking the risk

I mean, I see what you're saying and kind of agree. But for the musically illiterate masses, having no context would have precluded their full appreciation. Hopefully by meeting people where they are, Jimmy and Lang Lang (because it very well may have been his idea) piqued at least a few new people's interest in classical music.
