Lau Shak Chorchori is a traditional bengali dish used to eat with rice in lunch. It contains vegetables of the seasons & some time prawns. Today we are sharing its vegetarian version.
Ingredients -
Lau Shak / Bottle Groud leaves - 250 grams
Pumpkin - 50 gram (small cut)
Potato - 50 gram (small cut)
Brinjal - 50 gram (small cut)
Ridge Groud - 50 gram (small cut)
Poppy Seeds - 1 tea spoon
Mustard Seeds - 1 tea spoon
Lentil Dumplings (Bori) - 8-10 pcs
Green Chilli - 2
Ginger paste - 1 tea spoon
Garlic - 2 pcs
Salt - as per taste
Turmeric - 1/2 tea spoon
Mustard Oil - for cooking
Bay leaf - 2 pcs
Red Chilli - 2 pcs
Panch Phoron - 1/2 tea spoon
Cut and separate Leaves & stem of Lau Shak
Cut vegetables in small cubes
Soak Poppy & Mustard Seeds in water & make a coarse paste with green chilli & garlic
add turmeric, ginger paste & salt in small bowl and mix with water to make a smooth paste
heat oil and fry lentil dumplings till it become brown. Take out from the oil
add bay leaf & red chilli in the same oil with Panch phoron
now add potato first and cook for 4-5 mints
add vegetables and cook
now add turmeric salt & ginger paste and cook with cover.
after vegetables cooked up to half add lau shak leave & stems. Cover it and cook for 10-12 mints
add poppy & mustard seeds paste. Cook for 3-4 mints
add some raw mustard oil and off the flame. let it covered for 3-4 mints
Enjoy with Rice.
