To give you an idea of how much of a tank Albedo is, in an audio drama, Demiurge once punched Albedo in the gut to get her attention (for context: she was distracted by a Ainz related daydream/fantasy) and the act made him wince in pain. The punch did result in him getting her attention however, though Albedo barely noticed the punch and Demiurge humorously commented how she had literal abs of steel.

Couple of important things on Overlord from this week 1. Overlord Movie was officially screened for the first time to a selected group of audience. 2. Two new extra volumes of light novel will be released alongside the movie. (not focused on main story line) 3. So-Bin the artist who drew all of overlord released an entire album of artwork for overlord 4. As for the unknown classes and levels, its that the audience does not know. Pretty sure Ainz and others who are expected to know, knows. For example when Ainz confirms a class that so far was unknown about albedo in maybe next volume, her character sheet would be updated.

When they asked Author about whether Ainz wears shoes or not, he responded that he doesn`t care about that details and they should ask the artist(so-bin), and he explained that when he writes a character, he first think about what build is the most suitable for the role that character is going to play in story and then thinks about their gender and personality, so yeah he is just like you, he know every single detail of the character but just doesn`t think its neccessary to tell us about all of it and gives some freedom for headcanon and fanfic writers.
