Toasty, fragrant pita and creamy scrambled eggs make this a satisfying breakfast worth remembering when there is extra pita lying about. Author Leah Koenig informed us of the origins of this recipe. Mizrahi cuisine includes a category of recipes called fatoot that are made with stale flatbread that gets ripped and repurposed into something thrifty and delicious. 4 tablespoons clarified butter, ghee, or unsalted butter
2 pita breads (6 inch/15cm), ripped into small pieces
4 eggs, lightly beaten
1/4 teaspoon kosher salt, plus more as needed

I have eaten this so many times in the past week..for breakfast, after work, past midnight after a party. Every time, with honey, chilli flakes and salt. SO GOOD!

Looks delicious. We do the same with corn tortillas! Hand tear them and quick fry them the same until theyre crisp, add scrambled eggs and stir. Top w cheese and salsa! Breakfast/dinner is served

I usually make the same recipe but with the regular toast, white or brown, it's so rich and delicious dish. But the drizzle of honey is a sophisticated finishing that I thoroughly want to try.

I tend to skip the honey and use garlic roasted naan instead of pita. It makes for a great garlic buttery taste... but now I'm tempted to try it with honey instead of the garlic.

I think it's more that just about every food culture has a dish like this that utilizes leftover bread (or tortillas as the case may be) in some simple and delicious way! Migas and chilaquiles are awesome examples. Another Jewish dish and a classic of the Jewish delicatessen is matzo brei which is basically the same thing but using crumbled matzo instead of pita.
