Love it! We have been eliminating sugar and sweeteners as much as possible, all of them except honey and true maple syrup, so this is a great resource!
I made my first small batch of pectin free blueberry jam yesterday and it only called for 3/4 C sugar to 2 C blueberries (and 1 tbsp lemon juice). I’ve been working diligently in cutting out refined sugar and only sweetening with maple syrup or honey. Excited to dive in to these recipes!
Honey and Maple syrup are still sugars that will spike sugar in your blood. Stevia is not an "artificial" sweetener like the others. But, I guess if one has a problem with insulin, they really shouldn't be eating sugary fruit anyway.
