Lemon Blueberry Loaf: Moist and Fragrant
Ingredients:
lemon zest and juice - 2 lemons (juice of one lemon is for the loaf batter; juice of the second lemon is for the lemon glaze)
sugar - 1 cup
whole milk - 1/2 cup
cream - 1/2 cup
vegetable oil - 1/3 cup
eggs - 3
salt - 1/4 tsp
vanilla extract - 1 tsp
all-purpose flour - 2 cups
baking powder - 2 tsp
blueberries (fresh) - 1 1/2 cup
Optional glaze: powdered sugar (1 cup) and juice of one lemon.
Steps:
1. Zest two lemons.
2. Mix it with 1 cup of sugar.
3. Take vegetable oil, cream, whole milk, vanilla extract, salt, juice of one lemon, and eggs. Whisk it.
4. Combine two mixtures (dry and liquid).
5. Take 2 cups of flour and 2 teaspoons of baking powder. Sift it. Add it to the mixture. Mix it.
6. Coat 1 1/2 cups of fresh blueberries with 1 tbsp of flour.
7. Add coated blueberries to the mixture. Combine it.
8. Prepare baking mold (9 inches/23cm x 5 inches/13cm dish is used). Cover it with parchment paper (baking sheet).
9. Pour the batter.
10. Preheat the oven to 350°F (180°C). Bake for 60 minutes. Final 5 minutes keep a close eye to prevent overbaking.
11. Let it cool for 20 minutes.
12. Optional step: mix powdered sugar (1 cup) and juice of one lemon for a THIN glaze. For a thick glaze, reduce the amount of lemon juice to a half (2 tbsp).
