i was introduced to stephanie's recipes by my sister. she loves joyofbaking's recipes and video demonstrations because stephanie gives clear instructions and provides explanations for some steps and chemistry behind the baking, for example. i love how methodical they are, watching her is like watching an elder family member teaching me how to bake, it feels intimate and i always learn something about baking. i think joyofbaking is my favourite baking recipe archive!

I searched for this recipe because I have lemons in my fridge that I want to use up. This is my Italian Great Aunt Connie's recipe for lemon cookies!! She cut them into rounds though, she didn't put them in rectangles. She never measured anything, either, she just did it by "feel". These cookies are so delicious! Tried making these with half those amounts mentioned but accidently added 2 egg yolks instead of 1 but with the addition of 4tsp flour they turned out great thanks for the recipe :)

Thank you for all of the great recipes I've watched you make. I made these cookies for someone as a birthday gift last week and they keep telling me how wonderful they were. I made them as written for the first batch (and even sprung for some Plugra [European] butter), then I decided to make a 2nd batch to which I added some poppy seeds this time (between 1/8 and 1/4 of a cup) to see if that worked. Both batches tasted great -- and I have a new recipe for Lemon Shortbread cookies! Thanks again, V.

Thank you Joy I made these over thanks giving and they were really nice ....I just have one con that the lemon flavor was not so distinct although I followed your exact measurements and even added a tiny bit of lemon extract. Do you have any comments on this? Otherwise the cookie texture and taste was good.... couldn't stop eating them.
It`s been quite a long time without baking these. It is now full wild lime season here in Rio so I`m for a batch of these. BTW, this recipe ingredient portions are much similar to famous French Poilane Bakery Punnitions cookies!

Joy of Baking I tried them, however I made orange cookies. Turn out to be very delicious :) Thanks Stephanie for this wonderful treat. Cookies dough became bit soggy even though I added perfect measures of everything, so I added additional 2 Tbsp all purpose flour and 1 Tbsp powdered sugar,and then dough had good consistency.
Cover and store for 5 days .. ? LOL ... That won't be necessary ... HA! They wouldn't last that long at this house .. and it's just me ! ; ] Awesome recipe and demonstration .. these do look amazingly delicious !!
I roll into a rough log (wrapped in saran of course), slit an empty paper towel tube, put inside, tape the tube closed, then roll the whole thing a few times to even it out. Chill in the tube, then you can make nice even slices to bake
