Ingredients for Lemon drizzle cake:
250g / 9oz Self raising flour / if using plain or all purpose ad extra 2tsp of baking powder
200g / 7½oz Softened butter
200g / 7½oz Caster sugar
4 Large or 5 medium eggs (room temperature)
2tsp Baking powder
¼tsp Salt
Zest of 2 lemons + Juice of 2 lemons + 1tsp extract, Vanilla or Lemon & orange
300g / 300mls Whipping cream + 2tsp powdered / icing sugar / 1tsp Vanilla extract
100g Lemon curd
2tbl Granulated sugar
Ingredients for Lemon curd:
125g / 4½oz Butter
250g / 9oz Caster sugar
150g / 150mls / 5½oz Lemon juice
2 Large eggs
Zest of 2 lemons

Hi John! I just made this today. I thought it would go well with my brown veggie rice bowl with garlic tahini sauce I am making for dinner. I had a laugh at myself when I learned I should never use my stand mixer to make whipped cream. My attention span drifted to tidying up and in no time I had butter! haha. Bonus accident you could say. Hand mixer for me from now on. I had to make mine a 7 x 7 rectangle stack. as I lost my round cake pans somewhere? Judging by the tastes along the way from things on my fingers ;) This is going to be the best lemon dessert I have ever had or made! Thanks again to my favorite chef. My days are so joyful when I start them cooking and baking with you. My best to your lovely wife as well. Have a great day!

Aye ,now THAT'S what I call a lemon drizzle cake. Bless her,my sister reckons she makes the best lemon drizzle cake and I'm loath to disabuse her, I think I'll just show her this video,lol. And I'll definitely be trying out the lemon curd recipe and buying a spice grinder so I can make my own caster sugar and icing sugar as per your handy tip.. Brilliant video/s, John.

Stumbled upon your channel and it proves more often than not that serendipity plays a large role in any adventure . I’m sure there are hundreds of cake recipes out there , but this particular one is “the one“ that speaks to me . In certain southern parts of the US there is a cake that I'd like to suggest for you to try. It is called "hummingbird cake" and features banana and pineapple bits, a little bit of cinnamon (and if I remember, nutmeg) and is covered with a sweetened cream cheese frosting and toasted pecans. If you have not had it, I think you would like it.

John I have my new cooker in the new kitchen at long last . So looking at this one , im in a quandary , its either the lemon drizzle or Victoria sponge as the first cake in the new oven . My new cooker has a steam bake function and fan so good crispy bread , but its my first fan oven . Lemon drizzle do’s look yummy though .

Yummy John, we have to lemon trees but I don't bake to much but will do this. We actually freeze the lemons whole then my hubby grates them skin, pith and seeds and makes himself a big cup of lemonade, I also do pancakes of course. Thank you Maureen 🌵🌵🌵🌵🌵
