This cake is going to be one of my family's favourites from now on. Try it and you will not be disappointed!
Ingredients
170g unsalted butter softened
170g caster sugar
4 medium eggs
170g self raising flour
2 tsp vanilla essence
Zest of two large lemons
2 Tbsp milk
1 tsp baking powder
For the syrup
150g icing sugar
Lemon juice from two large lemons
Preheat the oven
Mix the butter with sugar until pale and creamy
Add the whisked eggs and mix well
Add vanilla essence and lemon zest - mix again
Sift the flour into the mixture and add the baking powder
Stir in two tablespoons of milk
Mix until everything is well incorporated
Pour the mixture into the tray
Bake for 40 to 45 minutes, at 160°C Fan oven/Gas 4/ conventional 180°C
For the syrup mix 150g icing sugar with lemon juice and heat it up, simmer for about 5 minutes
After taking the cake out of the oven, prick the top using a toothpick and pour the syrup over
Let the cake rest for a bit
Cut and enjoy
