The contrast between their outfits and personalities are so perfect. It feels like two kids who randomly got paired for a school project. One wants to be as productive as possible and the other one wants to immediately start throwing glitter on a poster board. I love it. Please make more episodes with this duo!
They're killing it man! I was bummed but happy for Andrew when he said he was taking a rest, but it's like instead we got a whole new and unique take on the Babish recipe for success. This has been great!

So I’m totally ready for Kendal and Alvin, the movie. Something in the road movie genre, traveling through Europe after they miss the Babbish bus in Rome and have to make it to a particular bakery in Paris for the next shoot, but they also lost all their money somehow. Wacky high jinx ensue.
I am glad that Andrew has returned, but Alvin and Kendall are fantastic teachers and cooking buddies, so i hope we will continue to see videos like this

Alvin and Kendall feel like when your teacher assigns your partner for a project and even though you're not from the same group of friends, you end up absolutely vibing and killing it.

When I first saw this wasn't going to be Babish, I was disappointed. Now, after watching these two, I'm like "Bubby who?" These kids need their own show. Love!
I know I keep saying this, but love hearing the real time audio rather than the voiceover on these episodes. Kendall and Alvin are such a great pairing.
Funnily enough, lemons were selectively bred (I believe from a sour orange and a citron, and the sour orange was bred from an orange and a pomelo) so life will literally never deliberately give you lemons. When life doesn't give you lemons, make them yourself😂
I gotta say I love Kendall and Alvin working in the kitchen together. Her expertise and his character match up really nicely for some controlled chaos.
If you want to be 100% sure the dough won't get wet from the filling, you can give the dough an egg wash before putting it back into the oven a second time. This will also add more color to the dough, that can otherwise end up looking pale in comparison to the brown meringue.
Lemon meringue pie turned into my quarantine project. I made 35 LMPs in 2021. Great video. FYI - you don't need the plastic wrap - what you do is just shake the custard while it's chilling a few times to smooth it out. I started with plastic wrap but the shake method works just as well.
Quick pro tip if anyone watching wants to make this pie: when making a crust like this, you can actually grate the butter before hand with a cheese grater. This gives you super small pieces and allows you to keep the butter super cold while ingot paying it in your flour. It also just cuts down on time
Question for the internet, with a little bit of lead in: I frequently find that lemon pies/bars/cookies don't really have enough lemony-ness to them for my tastes, so would adding lemon zest kick that up to acceptable levels?
I personally don't love the taste of citrus juices. I like them fine, but I don't adore them. Citrus zests, on the other hands, have OILS which taste so much better than the juices, in my opinion. So I'm always a fan of adding citrus zest. But if you want the tart lemony-ness, you're probably better off adding more lemon juice.

Best blind-baking 'weights' are coins. Not only are they heavier than rice or pulses but they conduct the heat - so the inner surface of your pie crust (the bit you WANT cooked cos that's where the filling is going) will brown as quickly as the outside.
Little extra tip; if you have hot hands, run your wrists under the cold water tap for about a minute; it makes your hands nice and cold for a while so that you don't ruin the pastry! :D
