Let’s make the most delicious shata/ شطة

If you are middle eastern you know you love shata! If you’re not let me introduce you.
You ask what is shata!! Shata is the middle eastern cured pickled hot chili peppers, they’re packed in oil and so delicious next to anything from hummus to labneh to banadora to chicken, you name it we eat it next to it 🥵
And it couldn’t be easier to make.

2.5 lb. Hot peppers (jalapeño, Serrano, Fresno)
1 bell pepper (optional)
1.5 tbs. Coarse salt
6 cloves garlic (minced)
Extra virgin olive oil
-Wash the peppers thoroughly with 1 tbs. baking soda and cold water, rinse one more time. I highly recommend using gloves and maybe a mask if you’re sensitive to pepper fumes!!
-cut the peppers in half and remove the seeds, cut into chunks
-place a large strainer in a bowl before starting on the next step
-using a food processor pulse the peppers making sure to push the side the cut should be small. I added one bell pepper because I noticed my peppers were very spicy (by the way you can tell from the fumes)
-after processing all the peppers add the salt and mix well while in the strainer. You will notice a lot of liquid has already been released from the peppers. DISCARD OF IT
-place a plate and heavy weight on top of the peppers. Leave it for at least 12 hours checking every 2 hours to stir and discard of of the excess liquid in the bowl
-transfer the peppers into a clean dry bowl add the minced garlic and 1/4 cup olive oil give it a good stir so the garlic is incorporated. You noticed I don’t use anymore salt
-pack the pepper into sterilized jars 🫙 fill until before the first ring add enough olive oil to reach the second ring. I like to stir with a wooden stick so there’s no bubbles and the oil gets into the pepper. Cover tightly and let cure in a dark place for 5-7 days. After cured keep in the fridge and enjoy when ever you like
Note: reel olive oil solidifies inside the fridge, so take out what you need and place in a bowl to come to room temperature
