INGREDIENTS
• 230g Softened margarine/butter
• 85g icing sugar
• 250g flour
• 1tsp vanilla essence
DIRECTIONS
• whip the butter and icing sugar together till light and creamed then add vanilla
• Add flour and mix thoroughly
• Place the dough on parchment paper and add another paper on top
• Use a rolling pin to roll the dough to the thickness of about 1cm
•Place dough in freezer for 15min to firm up then use decorative cutters of choice
• Bake in a preheated oven at 180°C for 13-15min till golden brown
• You can roll the dough again and use again
FILLING
•50g softened margarine
•160g icing sugar
• Sprinkle of turmeric for colour
• 1tbsp lemon juice
DIRECTIONS
In a small bowl mix all the ingredients together and sandwich then between the cooled biscuits
