Oh man, that was an awesome trip! So glad you guys had a good time. When you sang the jingle for The Wave, I had flashbacks to being in the car with my mom on the way home from the grocery store, listening to that smooth jazz. Holy moly that was forever ago! You get poutine a bunch of ways here. The real stuff is with curds and a poutine "sauce." I prefer curds and gravy or shredded cheese and gravy. The poutine sauce is thinner and not my favorite.
