I dont add egg on mines and dont have that issue.. i mix the ground beef with onion,tomato,rice,oregano chicken buillon and mix mix mix then make it onto balls while the water is kinda boiling then i add the meatballs one at a time and let em boil a couple minutes and add the veggies

Everyone makes them different. I only put cilantro and wayyyy less rice (cook mine in boiling water for like 2min) pongo asar los tomates y ajo y lo muelo (mi caldito pa las albóndigas) i obviously add veggiea😊
I think less rice and to add everything once the caldo is boiling. once its boiling add the albondigas, then the carrots and potatoes , and last the softer vegetables
I never add egg to my albondigas. The trick is, roll them and stick them in the freezer for about an hour, then, put them in the pot when the water is boiling and after you put the meatballs in DO NOT STIR!! Just made some this weekend and it was bomb! Edit: I also saw someone in the comments say less rice, and yes, I agree!
I knew exactly that would happen. I think he didn’t wait for the water to boil before putting in the albóndigas por eso no quedaron bien 😊 he’s great tho. Both of yall are awesome 🤩
Lol the albondigas awww😅❤,, u can also yes add another egg and also sear them with a little oil on the side and start the caldo boiling, the when the caldo is boiling put then very slowly one by one and in and preferably in a wide pot ❤❤ try again Bryan❤😊 its the thought that counts and dont give up🎉
The water HAS to be at a rolling boil before you put the Albondigas in, also less rice. Sometimes if the meat is at room temp, I pop the albondigas in the freezer for 30 min before dropping them in. Give it up for a king that tries tho👏🏼

I've never seared it before and it's perfectly fine. I think he just added a bit too much stuff to the meat. like the onion and tomatoes i stir fry them a bit until their juices release in the pot. then I add the water, let it boil and add the meat balls. after comes all the veggies. well, that's how I make them 😊
The ground beef had to much grease you can see it in the bowl when he was mixing you should buy the one that has less grease also to much rice !!! But looked yummy
I think next time Follow a process 1. You need to cook the meat balls first -first boil the water. Add a little bit of cuveto to water cut tomatoes 🍅 onion, cilantro, throw that to the water let that boil so it can get flavor let the water boil then you add the meatballs let the meatballs cook you put too much rice in it next time just put in less rice put 1/2 or less will be good. 2. After it boils add vegetable’s that boil and cook together add more flavor if needed add zucchini last it cooks fast now you can cover it For next time
First he added way to much rice for the albóndigas . Next maybe two eggs or three . The water also has to be boiling and the add the meatballs . I also prefer to used cooked white rice to the meat
Too much rice (i cook mine like two in a little bit of water until it boils dont fully cook it tho) and another egg to bind the albóndigas wait for caldito to boil
For the meatballs not to fall apart cook them in a pan with bit oil first.
