Chances are the original recipe did use lard, not butter. Cow (beef and milk) products are mostly imported in to the Philippines , due to limited pasture land, and especially back then, it was usually canned or dried milk products. Imports were halted during the war, so it can be assumed that ingredients like butter were not readily available. Lard was used also as a way to preserve meats, especially during the war. My grandmother was also a home economics professor, like Maria Orosa during that time in the Philippines and my family told of efforts to get food to prisoners of war. She called it “Tiki Tiki” cookies but for Filipinos it is called “Darak Cookies”. Grandpa used to work in a factory for Tiki Tiki. He used to buy Rice Bran from Bulacan province then it has to be pressed with water for the extract.
WOW! I'm from the Philippines and this is the first time I heard of this. When you said it's from out country, I thought the tiki-tiki means has the vitamins meant for kids called tiki-tiki and that it's used to feed to malnourished children. I did not expect rice bran at all! I did not even know you can eat those. They're for pigs though recently, with our rising rice prices, people online would joke about eating these.
I've never heard of half of American recipes I see. I am convinced it's only their family making things and they want everyone to start eating it too lol
I've been catching up on your more recent episodes. I saw the "life saving" but not the "tiki tiki" part and when you mentioned that in the video, my spidey sense was tingling. Could it be a Filipino war time recipe? Mad props to Maria Orosa for making all these recipes that seem really applicable to our current times.
I love the brief history you provide with your Hard Times recipes. It's always cool to learn a little bit about how resourceful people can be when under pressure. We underestimate ourselves sometimes.
We still use bran to feed pigs. You can buy them from rice millers. It's funny that we're giving all the nutritious bits to the pigs and leaving the boring carbs to the humans.

I want to make them, and share the history behind them, in honor of her courage and lifesaving work. I love seeing your eggs. I raised chickens for many years, and also had other poultry at times. Guinea fowl, turkeys, and ducks. I had many breeds of chickens, so I too, had a rainbow of egg colors. I always enjoyed having the multi color eggs.

My goodness those eggs are STUNNING! 😍 My cousin’s girlfriend has chickens and they lay some of the most beautifully colored eggs I’ve ever seen. It’s truly quite incredible.
Lard is actually a very good fat for hungry people.. it is actually probably a much better fat than butter. I wonder if you could use wheat brand for these cookies?
If Lard was used they'd still be fantastic, I've been baking with it more recently and have been loving the results. ETA: Duck Fat and Beef Tallow can be substituted but I haven’t really experimented with them yet.
Duck fat will be very meaty and has a similar melting point making for a softer end texture. Tallow has a significantly higher melt point ending in flakier textures and it can also have a rather beefy cast to it.
When using a spoon instead of a scoop to portion cookies, try using a second spoon to help shape and push the dough off the spoon. You'll get smoother cookies and no messy hands.
Will you please make Leche flan? My Lola made it and it was the best I ever had. My mom says it’s so hard to get it right. I love your tutorials so I’d love to see you make it. It’s philipino dessert.

I thought you were going to make "dirt" cookies, cookies made from dirt or ash as ingredients because I saw something about what people ate during hard times and dirt cookies was one of them These cookies sound much nicer to eat they are healthy for you and rice bran is easy to get hold of ( next to the oats in the supermarket usually on the very bottom shelf )
