❤️ "Lima Bean Soup" Ingredients (5-6 servings) - Cooking with Fen & Lady First
💛 Main Ingredients:
- Lima Beans 350g
(Peeled, yields about 300g)
- Pork 100g
- Scallions 2 stalks
- Cilantro, to taste (optional)
- Water 1500cc
💛 Seasonings:
- Salt 3g
- Olive Oil 1 tablespoon
💛 Main Tools:
- Stainless steel Chines wok
❤️ Directions:
1. 01:12 Handling Lima Beans and Scallions:
- Peel the Lima beans and set aside. If fresh Lima beans are difficult to peel, freeze them first, then rinse with water before peeling. The skins will easily come off.
- Cut thick scallions in half and then into segments. For thin scallions, simply cut them without splitting. Rinse the green parts of the scallions thoroughly and cut them into finer pieces for better texture.
2. 03:41 Cooking Pork and Lima Beans:
- Once 1300cc of water is boiling, add pork and Lima beans along with a tablespoon of oil, and season with salt.
- After the water boils again, reduce the heat to medium-low, cover the pot, and let the Lima beans slowly break apart (about 16 minutes). When the Lima beans start to slightly break and have a slightly powdery texture, you can add approximately 200cc of water for the next step.
3. 06:37 Adding Scallions and Cilantro:
- Cook the scallions for about 1 minute, then add cilantro (optional), and turn off the heat. Adjust the saltiness to your preference.
Note: Lima bean skins can be steamed with 50cc of water in a rice cooker, then blended with various nuts and pumpkins to make a nutritious smoothie!
