Coconut oil is 92% saturated fat. I would call that a saturated fat. I’m pretty sure our ancestors who were eating high amounts of coconut oil and butter weren’t dying because of heart disease. No they weren’t, not like when we were told to switch to Margarine...

@@SimonWoodburyForget Yes, It is called prepackaged food, fast food, soda and so on. Those are the dietary issues that exist in todays world. If we went back to eating a proper diet that is filled with fats and protein we would be in a lot better shape.

Actually, there seem to be lots of contradicting studies about whether saturated (animal) fats cause heart disease. It makes sense on one hand but it doesn't seem to be what actually harms people.

This really needs updating. The health benefit claims of crisco (included in the powerpoint images) have been completely disproven. I would not touch a 'vegetable' oil for health. Industrial seed oils seem to actually be unhealthy to human health, Industrial seed oils should not be included in the pictures of 'healthy' fats. It seems unlikely that saturated fat (which you show as more stable and has been eaten for 200,000 years by homo sapiens) would be unhealthy and as it's more stable it's better for cooking. The fact that olive oil and coconut oil contain some percentage of saturated fat make this presentation a bit inconsistent. I really hope this will updated and I hope students don't believe the cholesterol HYPOTHESIS presented here as a fact. I am 55 years old and followed the high carb, low fat, non smoking, no drinking lifestyle. I did this from 14 years old to age 50. I am a personal trainer and eat things like porridge, skim milk, honey, low fat everything, drank water, had low fat protein shakes and drank fresh orange juice and ate bananas. When I had a coronary artery scan I should be the 'poster boy' for the food guidelines. A score of over 400 means you have a high risk of clogged arteries (95% chance of heart attack within 5 years) As I had been studying nutrition i KNEW all of what you state to be wrong and lo-behold my score was 639! My wife who is 50 and has eaten saturated fat, cooks with lard and avoids bread and potatoes had a score of zero. So she has zero plaque build up and I (low-fat, high carb) had the world's worst arteries. Since ignoring all the 'standard' advice I have reversed the plaque build up. Hope this helps students realise that they need to look at current research.

Personal Training Max absolutely-I agree with you. I had a similar experience. Winded up with 3 stents after eating as told. Also ended up diabetic and hypertensive. Now off all meds no longer diabetic after. Changing how I eat. Which is in no way low fat but definitely low carb.

Near the end you mention that saturated fats are bad, then when discussing the cholesterol build up you say this is from a lifetime of bad habits. I am trying to find out exactly why saturated fats are bad. Our body seems to like them and even make and distribute them when we fast, also they are less prone to oxidation so doesn't that make them actually better and to me they seem to be taking the blame for a lifetime of bad habits.

The chol is not the problem - it is the problems before (wrong food, smoking etc) that damages the veins and arteries. Those neeed the chol for mending.
