Live Fire Grilled Shrimp Tacos - Glen And Friends Cooking
Ingredients:
500g (1 lb) shrimp, peeled and deveined
5 mL (1 tsp) black pepper
5 mL (1 tsp) cumin
5 mL (1 tsp) coarse salt
5 mL (1 tsp) garlic powder
5 mL (1 tsp) paprika
5 mL (1 tsp) onion powder
5 mL (1 tsp) chili powder
15 mL (1 Tbsp) tequila, optional
60 mL (¼ cup) olive oil
½ Pineapple
250 mL (1 cup) sour cream (or mayo)
2-3 chipotle in adobo
Chopped onion
Chopped cilantro
Tortillas
Method:
In a bowl mix together the pepper, cumin, salt, garlic powder, paprika, onion powder, chilli powder, tequila and olive oil.
Pour this over the shrimp and stir to coat - place in the fridge to marinate for 20-30 minutes.
Slice the ½ pineapple into rings and grill until caramelised and soft, then dice.
In a small bowl mix together chopped chipotle in adobo and sour cream.
Grill the shrimp until pink and cooked through.
Grill the tortillas until warm.

I have a good tip: When you open a can of chipotle peppers in adobo sauce, pour it into a medium/ large jelly jar the size of your wand mixer and blend. I add a table spoon or two of water to help. Then you can use as little or as much as needed and cap in the fridge. I use a little of the stuff in everything! After seeing this vid - I'm making fried crawfish tacos for supper... for real.

Hope you are enjoying your firepit Glen! Thanks for being an Iron Ambassador! I watched your video of picking the 4" Cottager up and I have to say a lot of stuff has changed at the shop since that video. Also if you use dry wood you will get less smoke!

Americas home kitchen did a recipe for pulled smoked pork on a gas grill. They made two packets of wood chips with cuts in the top of them. One packet had dry chips to start smoking immediately. In the other, water soaked chips that would start smoking a bit latter. I agree fire is a better option, but this idea is a pretty good one!

Julia, As always your timing is impeccable. Glen, here in Socal was a chain called Rubio's Baja and the white sauce is equal Best Food mayo and plain yogurt and if needed a little water to thin it out if thick. The taco looks great.

Hey Glen try giving those corn tortillas a bit of a steam (you can do it in a damp towel in the microwave) before slapping them on the grill. Should freshen em up to good as new.

I knew this had been pre recorded because its been stormy and hot as heck in ontario...hope you guys are getting some nice r and r in.Minus the pineapple and pepper ingredients for teens allergy...Im making this tomorrow.I miss crossing the bridge into Mexicantown and getting fresh tortillas,crema,churros etc from HoneyBee in Detroit.When we can cross again maybe Ill mail you guys some proper tortillas!

These look great. The fixings would even go well with grilled fish, baby octopus, or a mixture of seafood. With the pineapple rings you could try the following if you want to ramp up the spice: Take some of the small Thai bird's eye chillis and make some slices lengthwise, but not cutting through the fruit. Either that or just take normal chillis, de-seed and slice. Put the chillis into a jar with some vodka or other neutral alcohol and leave them to steep in a cool dark place for at least a couple of days. Once you've got the vodka to your desired spice heat level, you can use it to add a chilli flavour to just about anything. Here, we are going to pour the vodka onto the pineapple rings and allow the chilli to penetrate into the fruit for an hour or so. Just before grilling the pineapple, drain off most of the liquid and then dust the rings with sugar. I'd recommend brown sugar to get that treacle flavour. You could even chop or pulse the grilled fruit down to the level of salsa.

When you have this many great ingredients the way to go is larger flour tortillas and wrap them up like burritos. Refried beans will help keep it all together long enough to get into your mouth.

Man, that looks delicious! As a mexican myself I must congratulate you because your Tacos are mexican enough (I mean, you didn't use that crappy taco hard shell some foreigners tend to use and your mixture looks tasty as hell). I'll just recommend you to prepare some salsa tatemada or pico de gallo instead of the chipotle cream, you'll thank me. You've got a new suscriber, greetings from México City.

Just a FYI sense most people don’t know. Tacos dorados are a real authentic thing In Mexico. Aka hard shell tacos. Probably shouldn’t go around saying something is foreign when it originated in Mexico.

Corn tortillas are extremely easy to make. You just need nixtamalized corn flour and water as ingredients. For equipment, a tortilla press and a griddle is all you need. Although you can score authenticity points by using a comal.
