Your observation about naengmyun is right. You can eat it year round, but it is especially refreshing during summertime. The red dumplings you had were filled with kimchi (kimchi mandu). Those dumplings have a good filling to wrapper ratio.
Love this. Street foods around the world look so good. Btw, even before you made the comparison, the pancake reminded me of Arby's potato cakes. Sadly they stopped carrying their hash browns somewhat recently. The reason that they were so good was the center; the starch in the middle made the center creamy.
