Great video! I don't know a lot about simulators but this was something that had crossed my mind and I really couldn't figure it out on my own. Your explanation was very thorough and clear, thank you.
In my opinion it will make it easier for you to learn the limits of the car to go faster. Don't expect to be quicker as soon as you first use the load cell pedals though!
