Ingredients:
2 mini Lobster Tails
4 tablespoons Butter and minced fresh garlic of 1-2 tablespoons Mayonnaise
1/2 tablespoons Fresh lemon juice
1/2 tablespoon minced celery
1/2 tablespoon minced chives
split-top hot dog buns
Black Pepper to taste
Old Bay Seasoning to taste
Directions:
Preheat your grill to 375 degrees
Grill Lobster Tails until the shells are bright red and meat turns white. (There’s no need to turn the lobster tail over.) Do not overcook.
A thawed lobster tail will take about 8 minutes to grill.
Remove the lobster tail from the grill.
Crack Lobsters tail and remove the meat. Chop meat into bite-size pieces.
Place lobster meat in a medium bowl. Add heated 4 tablespoons Butter and minced fresh garlic or one tablespoon of mayonnaise. Add half tablespoon freshly squeezed lemon juice. Stir gently. Add more butter or mayonnaise and lemon juice, if needed, sprinkle black pepper and Old Bay Seasoning to taste.
Spread flat sides of the buns with butter. Heat a nonstick griddle over medium heat. Place buns, butter side down, onto hot griddle. Toast until golden brown, about 2 minutes per side. Remove from the pan and allow the buns to cool slightly.
Fill each toasted bun generously with the lobster mixture. Serve immediately.
