Another way to season top round is to do a dry brine with kosher salt. I would completely cover both sides with the salt and let it sit for around 60-90 minutes, depending on the thickness of the top round. Err on the 60 minute side of the brining process as you don't want the meat to be too salty. After the brining time has passed, completely rinse the salt off the top round. Then pat dry and apply a light coat of cooking oil and generously season with pepper, garlic, or whatever suits your pleasure. You won't need to season with salt, though, since the dry brine has already infused the meat with it. An optional step is to sear all sides of the top round on a pan with butter or oil. Or you may opt to sear with a hot grill in addition to grilling the meat to the desired doneness. Then cook the top round to desired doneness. After removing from the grill, let the meat rest for 10 minutes, then cut into thin slices against the grain. What the dry brine does is that the salt extracts moisture from the meat, where the juices become salted, and then the juices are absorbed back into the meat. The salted juices help to flavor the meat while also tenderizing it.

Larry, you never cease to amaze me! You made this top round steak look better than filet mignon! It's wonderfully juicy, obviously tender, and perfectly seasoned with Cattleman's Grill! Maybe I would be off base with this idea, but I could see me making a luscious fajita with these strips of succulence! Mmm! Thanks for sharing my friend!

I tenderize it with the hammer. Then throw it into a bag of pureed pineapple for an hour. Remove. Rinse. Pat dry. Season. Sear. Then indirect heat. Remove. Rest. Slice. Then eat.

Interesting *looking* rub! I like the coarse look. Steak looks mighty fine, too! That's a hard cut to get right, and if you overcook it by so much as a blink, it turns to shoe leather.

+Anonymoose John, I loved the flavor and the simplicity of the rub!! Gonna use it on my prime rib this year! You're right, overcook it feed it to the dog or my wife. She won't eat any pink and still sticks this in the microwave for a couple minutes after I cook it! Arrrgghh!

i don't under stand it, but the flake is better than ground, and seems like it releases its favors faster too. seem to melt in the meat. That a Fine looking steak and a Awesome rub, Mccormick Montreal Spicy is a Awesome rub too and its a Flake rather than a grind That what i went to or make is the flake spices course where its shave off, rather than grind up. IT MAKES A IMPRESSING BIG DEFERENCE and i definitely LOVE IT! and BLOODY RARE!! not raw, bloody rare JUST THE WAY YOU DONE IT with a little more blood YOUR A GREAT CHEF BROTHER and IMPRESSING

Store has London broil shoulder steak, I hate they call everything cheap London broil, I marinated in soy sauce, Worcestershire sauce and white wine vinegar for 15 min, going to try this recipe, bought a bunch, then I used needler both sides while still wet, grilled to 125 and took off, covered 10 min, was 137, sliced on bias against the grain, first couple slices worried me cuz little tough, then was so tender, I had larryanitis, kept eating as sliced, I'm using your method next Larry, then Korean, then grandmas Lipton onion soup mix🤷, it worked grilled then covered in cream of mushroom soup in crockpot on low 5 hours, I'll never forget it, was a fat kid so no seconds🥺, but grandpa always had a bowl with a biscuit for me when grandma in tub lol. Idk why so many different cuts called London broil? Love it when market puts flank steak out as London broil👍, asked my butcher for London broil had no clue what I was talking about🤣😂

I like grill mine and then cut it up and make fajitas with it. Cut into small pieces. Add it to some onions and peppers then add taco seasoning.

Sooo I did 2 minutes on each side and then an additional 4 minutes for 8 total minutes and the steak was only at 105°F Your thoughts

I’m not that big on marinades myself. They really seem to do little, if anything at all to actually tenderize such a tough cut of beef, and they can prevent a crust from forming and causing the meat to be steamed rather than grilled. Slicing the meat very thinly against the grain is the trick to making a cheap london broil steak tender. I like to leave the seasoning mix on for at least an hour before cooking so that the salt penetrates deep into the meat.

Hey Wolf, I did London broil in a 12 hour liquid marinade that turned out very moist flavor full and tender. Good problem is I still have about a pound and a half left over. Any suggestions for the leftovers other than just reheating? I was trying to think if it would go good in some kind of noodle dish like a Stroganoff or something?

unfortunately any type of reheating is going to destroy your good cooking efforts. I would suggest to find a way to eat it cold or barely warmed through like in au just. Slice real thin for cold roast beef sandwiches or let it poach in August just for a minute utensils or so for hot roast beef sandwiches, French dips, etc. just don't over heat or it will become dry leather.

Looks great. Any suggestions for temp and timing using a pellet grill with indirect heating, I do plan to use grill grates to apply the sear marks. Thanks for the help.

+ron cover Hi Ron, when I do a reverse sear on a top round I like to cook indirect at 250º until I get to an internal temperature of within 10º of my desired doneness. In my case I like it rare-mid rare, and will pull and loosely tent it will aluminum foil at 115º. Then crank the heat to 550º with the grill grates and sear for about 2-4 minutes per side depending on the thickness of the steak. What pellet grill are you using? I have two Rec-Tecs and really love them. Thank you for watching and happy grilling! Larry

+TheWolfePit . Thanks for the quick response. I only have 1 RecTec and have had it for about 2 months. It has made grilling more of a hobby now and finding new recipes which have turned out great. Appreciate the help. Have not tried the reverse sear method, but will try. I think I might the rectec might limit me to 500 degrees, but that should work for searing.

No, London broil comes from a top round loin. Top round steak is a smaller version of London broil. London Broil is a roast that's a type of cut.

NO! 'London Broil' is a method of cooking, it is not a cut of meat. Top round 'can' be used to make London Broil, but flank is more typical.

I'm all for making something look appealing if your going to plate it whole. I wasn't trying to rip into you, was more of a joke. Just plating it thin sliced (which is the way to go with this meat) kinda counteracts the whole hashmark thing. Seems like the only person who would see it is the chef, which I guess is good enough hmm...

+GeneralMartinus - Well now you can take the approach that Larry, or anyone, would have cooked this up for his guests, and since the meat had to rest for a few minutes before being served, it could be presented to them whole, showing the hash marks for that extra eye appeal, then cut up in front of them. I agree that I wouldn't do this for myself, but Larry is cooking for an audience, and he likes to make a great presentation for them.

400 degrees, grill for 4 minutes each side. rest 10 minutes, slice against grain. could have been the entire video, but thanks for sponsored the cash grab advertisements, I guess
