Bermondsey Jubilee Line station is quite big and can handle a lot of commuters and also can handle lots of football fans as it’s not too far from Millwall FC The Den stadium. And is south of London Bridge station.

Yes via West Ham. But since the walkout aka rail strikes. The other option is Jubilee Line to London Bridge and use Northern Line to Bank and walk to Monument and use the District Line to Barking. Or Northern Line from London Bridge to Moorgate and use Hammersmith & City Line to Barking.
Trenitalia c2c are not getting rid of the Class 357 Electrostars. The Class 720/6 Aventra is only replacing the Class 387/3 that have gone to Great Northern.
