Long pepper used to be very common in Indian cuisine before the Portuguese introduced the chillies.

That's also where cashews come from. The Porteguese did a lot of that. They brought chillies to Angola and Mozambique which resulted in peri-peri chicken. They brought deep frying to Japan which resulted in tempura. When there's not any plundering to do or wars to fight in, colonialism is surprisingly tasty.

A lot of the 'odder' spices (cubeb, grains of paradise, long pepper etc.) were quite common in the old days, but the Ottoman Empire doubled taxes on the spice trade and Europeans simply stoped using them. A classic case of killing the goose who lays golden eggs.

Hey if you're in northeast India be on the lookout for blue sausage fruit (Decaisnea). There are two types, one is nice the other bland jelly. I don't know how to tell them apart, sorry! Don't eat the seeds, you get a tummy ache and gas.

Grind that up peeple with some tumeric, salt and sprinkle over avacodo toast and I'll have breakfast. Thanks J for another interesting find.

@@WeirdExplorer but in India we are recommended not to eat it daily . In Ayurveda it is very strong herb .

We make ayur vedic coffee out of it...... Traditionally clthis coffee is known as kashaya in my state in India. Typically used as immunity booster along with so many therapeutic properties. Blend of various herbs and spices used to make this type kashaya powder tea with caramelized jaggery or palm sugar......... This long pepper is used to treat cold and flu in Ayurvedic medicine. We drink this aromatic hot drink every day..... It's tasty and healthy.

I’ve found long pepper is best used in slow cooking processes such as stews and braised meats. It’s actually milder after cooking, as opposed to biting into a cooked black peppercorn. The long pepper mellows with slow cooking, but adds more of a depth of flavor instead of just the heavy handed black pepper.

Personally I think crushing it makes it lose all that heat. Don't know why though.

That herbal note on the second type (the piper retrofractum, I believe) is not to do with the age of the pepper catkins. It's always there and it makes the pepper gorgeous on steak or over fried green peppers (padrons, shishitos, even bells if you like those). I think it would also lend the spice some unique use in curries but its heat is lost ever so easily when cooked or otherwise mixed into anything. It's only really spicy when eaten straight.

Thanks Spicefreak! At the time of filming I didn't realize it was a different species so I thought it may have been affected by something. I've been enjoying it, so much depth to the flavor.

Yeah, it really has a lot going on and, of the 5 unusual peppercorns I tried for my blog a while ago, it and the grains of paradise definitely felt like they the had most merit. Not something I use all the time but, when I'm feeling fancy, the piper retrofractum is a great way to go.

Have you thought about doing a video on kava? it's in the same genus (piper methysticum) as black pepper (piper nigrum). However, it's consumed for the roots, which is made into a sort of tea. I've never been able to try it, myself, but if you're in an area where it's common it might be interesting. It's supposed to be relaxing and slightly sedative.

I love long pepper, and to me they have an umami flavour/scent as well as the other flavours mentioned. Fantastic with red meat, starches, cheeses and greens like spinach, especially. I really enjoy medieval European cooking; so many recipes from the period just wouldn't taste the same without this lovely spice. Thanks for showing them being dried; very interesting. Nice video!

I read about this in a book on mediaeval cooking and was curious about what it's like. Apparently they used it relatively frequently back then.

Yes! I found a lot out when researching for the article I wrote. It was very common, but more expensive so eventually it faded from popularity then when chilii peppers started showing up in Europe long pepper got the axe.

I would love to do more collaborations. Its a bit tricky though, generally RU-vidrs want to be on a similar level with who they work with. Looks like Indigo traveler is over 200k subs so he probably won't bite. But hey I'll reach out. I'm open to suggestions if you know of any others who are more within my range :)

1:45 I think it's not long pepper. It's wild pepper, piper sarmentosum 3:36 It's long pepper, piper longum & piper retrofractum

i bought some good quality long pepper for a dish i made years ago. i honestly cant remember the dish but i remember all i could taste was the long pepper. it was so strong and funky and unique, i couldnt enjoy the dish. Even when i would take a whiff from the jar it would give me shivers. Btw i love black pepper and also sezchuan pepper dishes.

I got to see peppercorns being harvested and dried in southern Cambodia. They use a lot of the fresh green peppercorns in the food there, delicious!

Old vid i know but I just got myself a package of long pepper and just ate one. Yup, definitely has some heat but a bit more complex than plain black peppercorns. Going to be fun cooling and pickling with them.

Went to the Asian market for black peppercorns. Saw the long pepper, thought about buying it, but had never heard of it, so I went with the black peppercorn. That night I'm watching a cooking show, and the guy is using long pepper! Says if you find long pepper, you better buy it. Now he tells me! I now use it all the time.

it's good in soup. only 1 small piece for a pot of soup. the only place i found them is in Malaysian spice mix (sup bunjut). it's nice. the other spice in the mix includes cinnamon, star anise, clove, fennel, cumin, coriander, and cardamon.

Bought some dry red long peppers after this video just to try it out. To me they smell kinda like Cumin or five spice had a baby with pepper.

I bought some Szechuan peppercorns for use in a recipe. I was left with a lot, so I just chewed on them for the numbing effect instead of throwing them away. I then "graduated" to buzz button flowers/toothache plant flowers which are fun to chew on as well.

This was the hottest pepper, before chili was discovered in the new world, and it was in high demand back then. Alaric, chief of the Visigoths, demanded part of the ransom for his sacking of Rome, to be paid with three thousand pounds of (indian) long pepper. So boil it down to extract as much of the heat as you can, if you want to make ancient Indian food, because the flaming chili concoctions they eat now is not authentic Indian cuisine.

I believe ghost peppers are originally from India. Arunachal Pradesh in the NE though, so it might not have been technically India back then.

Yeah, the fresh fruit is p. longum, the dried one is p. retrofractum. They both get called "long pepper"

I grow both species of long pepper in SWFL and the longum is a super versatile plant! It has grown in stagnant water, full sun, shade, partial shade, and sends out tons of runners when happy. Retrofractum likes climbing, but is INTENSELY more hot and herbal tasting. The two are often conflated.

Thank you for making and posting this video. Piper longum contains piperlongumine which has health benefits. I had been looking for exactly this range of information about the spice to determine how I want to try it out, although I was hoping you'd also discuss the best way to grind it up.
