In all my life and I am 82 I have never seen anyone, be it mother, grandmother or aunts, boil tomatoes in water. I guess it would be a sacrilege for us. Of course we mostly eat tomatoes fresh in salads or side dishes, and we make sauces for the noodles, that is tomatoes, onions, carrots, celery, green peppers, herbs (thyme, basil parsley, etc.) and ground beef or veal all cooked in a little oilve oil. We used to eat beef a lot (it was the case when I was young), but not anymore. It has almost disappeared from our menu. We eat mostly chicken, turkey, very little lamb (it is not in our custom like in the arab countries) and lean pork (our pork in Québec is recognized to be the leanest in the world and we are proud of it). Most of the time, we do not eat meat in already cut small pieces like you seem to do, something that I find very strange. Maybe it is because you eat with chopsticks and not with for and a knife.
