Cool. Another issue for me (on a personal level) with plant-based meat and dairy substitutes is acclimation. Or maybe I should say de-acclimation. If I eat stuff that tastes like a true facsimile of meat or cheese, my body will be more likely to crave it, and that craving doesn't care about the ethics or the chemistry.
