Loukoumades - Greek Donuts & Why they sometimes Fail | Christine Cushing

I show you how to make light, airy loukoumades- aka Greek Donuts, with my own twist. I go through the tricks to perfect the batter, the proper oil temperature to fry them at and why they sometimes fail. The addition of lightly caramelized apples gives them a very unique twist , paired with tons of spicy cinnamon. You Must Try! Full Recipe below.
Loukoumades - Greek donuts with Caramelized Apples
1 1/4 cups all purpose flour (185 gm )
1/4 tsp. salt (2 ml)
1/2 tsp instant yeast (2 gm )
¼ -1/3 cup warm water (60-90 ml)
2 tsp. sugar (10 gm )
1/2 cup buttermilk(110 ml)
1 egg
1/2 tsp. vanilla (2.5 ml)
1 Tbsp. butter ( 15 gm )
1 small cooking apple, peeled and finely diced
1 Tbsp. sugar (15 gm )
2 cups oil for frying
½ cup Greek honey (125ml)
Ground cinnamon for serving
In the medium bowl combine the dry ingredients and blend. Add the milk, warm water, egg , vanilla and sugar to the flour mixture and whisk until fully blended. Batter will be loose and sticky. If batter does not easily drip from whisk, add the remaining water. Whisk to develop gluten in flour slighty.
Cover with plastic and let rest until doubled about 1 ½ hours.
Meanwhile, heat butter and sugar until slightly golden. Add the apples and toss for a few minutes , just to soften. Remove from heat and cool. Set aside.
Preheat oil to 340 D F - 170 D C, for frying in a small heavy skillet. Oil should be about 2-3 " deep for frying.
Using your hand scoop some batter and squeeze it out , making a fist, as shown in video. Use a spoon to scrape the batter into a round. Fry about 8 balls at a time to maintain a constant temperature. Using a slotted spoon stir dough around to brown evenly for roughly 2- 3 minutes, floating and evenly golden brown. Drain on paper towel.
While donuts are still warm, drizzle with honey, apples and dust with cinnamon
makes 24 loukoumades

Where I grew up we have a yearly Greek Festival, these were one of my favorites (it was all good). They called them Honey Balls, easier for those of us who aren't Greek to say lol. At any rate they are delicious! Thanks for the recipe!

However, the name of this dessert is Lokma and it is a Turkish dessert, not a Greek dessert.

Christina … This video is a solid 10 out of 10. I love eating loukoumades but have never attempted to make them - but I will now after seeing this video. Just loved the segment of your video of you frying/tossing the apple set against the Greek music. Excellent. Love your work!

I originally tested it with the apples inside and it works, but I found the apple flavour got lost in the dough . I hope you try it either way.

Good question. I did test it that way and I found that it affected the delicate texture of the dough. It does work though , if you prefer that.
