1- Dry roast 1 cup of besan on a medium flame for few min till get a nice roasted aroma(To remove the raw smell of the besan)
Set aside to cool.
2- Cut the 1 Kg of fish into desired pieces & rinse 3-4 time with tap water.Drain the water completely. Sprinkle 2 TS turmeric powder & keep for 10 min.
3- To a mixing bowl, add 200 g ginger garlic paste,1 ts each of : turmeric powder, red chilli powder, garam masala, amchur, red salt, methi/Fenugreek powder, sarso powder, black pepper powder,
saunf powder, Ajwain/Carom seeds powder ,1/2 cup lemon juice or white vinegar & add regular salt as per taste.
4- Add the fish to it & marinate well for 15 min.
5- Heat a wide non-stick pan with 2 Tb Spoon of Oil to it. When the oil turns hot add Ajwain. When they begin to splitter/sizzle, gently place the fish pieces one by one & fry on medium flame for 5 min on each side.
6- When the fish is almost cooked, sprinkle the besan evenly using a sieve on only one side & fry without burning.
7- Flip the pieces & continue to fry till cooked & aromatic.
8- Garnish with onion/ lemon slices & Serve Tawa fish hot as a starter or a side dish.
You'll be amazed at how little oil you need to get that perfect crispiness on the outside while keeping the fish tender and juicy on the inside.
