Jacob should listen ‘Let It Go’ and ‘I Don't Want To Miss A Thing’. As you say all we really want and need is to watch Lucy, hear her amazing voice and concentrate on the song. Anything more would be an unwanted distraction from impeccable singing. I was privileged to the early Christmas present last week to watch Lucy sing this song live at the intimate performance. Lucy’s voice was like a Harp and she sang this song to perfection.
Your analysis is spot on especially the part at the end when you mention the fact Lucy never over sings or does unnecessary and pretentious vocal gymnastics, she just sings everything with heart and emotion and keeps things understated. The best singer's often know that less is sometimes actually more.

I love what your son said about the little mermaid, that singer is Jodi benson and yes she does sound like Lucy, Jodi was a Broadway singer before voicing Ariel. Lucy would have made a great Ariel!
