Lumpia with sweet chili sauce

Lumpia Recipe (Filipino spring rolls):
-To make it easier, I used Mama Sita’s Lumpiang Shanghai mix (you can usually find this at your local Asian market)
-1 lb ground meat of choice
-1 1/2 cups finely chopped carrots
-1 cup finely chopped onions
-2 Tbsps finely chopped spring onions
-1 beaten egg
-2 Tbsp all purpose flour
-cooking oil
-45 pcs spring roll wrapper (8” in diameter)
1. In a bowl, combine Lumpia mix, ground meat, carrots, onions, spring onions, & beaten egg.
2. Scoop one Tbsp of the filling onto a spring roll wrapper, about 2 in. from the bottom. Spread mixture evenly into a form of a roll well across the wrapper and roll tightly. Seal the edges w/ water or egg whites.
3. Cut into 3 pieces & dip both ends in some flour.
4. Deep-fry over medium heat until golden brown & drain off excess oil.
Sweet Chili Sauce:
2 TBSPS finely chopped Thai chilis
1 TBSP finely chopped garlic
1/4 cup rice vinegar (do not substitute)
1/2 cup water
1/2 cup white sugar
3/4 tsp salt
1/2 tbsp corn starch + 1 Tbsp cold water (for thickening)
🌶 Wash your Thai chilis & dry them. Slice lengthwise & scrape out the seeds w/ a spoon. The seeds are bitter, so make sure you are left with just the skin and flesh of each pepper.
🌶 Finely chop the chilis and garlic cloves. The smaller the pieces, the better, as they will stick better when dipping.
🌶Add all ingredients except the corn starch + cold water slurry to a medium sauce pan. Bring the mixture to a boil and then reduce to a simmer.
🌶 Simmer the mixture for 4-5 minutes on medium-low heat, stirring occasionally.
🌶 In a small bowl, add the cold water to the corn starch & mix thoroughly. Adding corn starch to hot water will lead to clumping, w/c is why it must be mixed separately.
🌶 Add the corn starch mixture to the sauce pan and stir to combine. Simmer an additional 3-4 mins until the bubbles become more concentrated and the mix is slightly thicker.
🌶 Remove the pan from heat and allow to cool for at least 10 mins.
🌶 Store the sweet chili sauce in a glass container in the refrigerator for up to 2 weeks.
