Full Written recipe for Maa ki dal
Prep time: 7-8 hours (includes soaking)
Cooking time: 30-40 minutes
Serves: 6-7 people
Ingredients:
● Kaali urad dal (whole black gram) - 1 cup
● Chana dal (split chickpea) - 1/2 cup
● Adrak (ginger) - 2 inch
● Hari mirchi (green chillies) - 2-3 nos.

For tadka:
● Ghee - 3 tbsp
● Jeera (cumin seeds) - 1 tsp
● Adrak (ginger) - 1 inch (roughly chopped)
● Lehsun (garlic) - 10-12 cloves (roughly chopped)
● 3 tbsp

● Pyaaz (onions) - 2 small size (sliced)

● Hot water as required
● Garam masala a pinch
● Fresh coriander to finish (chopped)
Method:
● Wash both the dal thoroughly for 3-4 times or until the water is clear. soak them overnight.
● After soaking, rinse it with fresh water and transfer it in the pressure cooker.
● Further use a hamam dasta and coarsely crush the green chillies and ginger, add it in the dal along with turmeric, salt & onions, pour water and stir once.
● Close the lid & pressure cook for 4-5 whistles on medium low flame.
● Further, switch off the flame and allow the pressure cooker to depressurize naturally.
● Once depressurized, open the lid, and check whether the dal is cooked by mashing it.
● Use a muddler or a spoon to mash the dal completely, the chana dal should be mashed completely while keeping the urad dal a little chunky.
● For tadka, set a pan on medium heat, add ghee, jeera, ginger & garlic, stir & cook on medium flame until the garlic gets some colour.
● Further add onions, stir & cook until the onions are light golden brown in colour.
● Now, lower the flame and add the powdered spices, green chillies, tomatoes, salt & fresh coriander, stir & cook on medium high flame for 2-3 minutes.
● Add little water, stir & cook on medium flame until the tomatoes are mushy.
● Further add the cooked dal, stir & cook on medium flame.
● Add hot water as required to adjust the consistency of the dal. You can keep it a little thick or as per your preference.
● Taste for the salt and adjust accordingly.
● Add garam masala and finish with some freshly chopped coriander leaves, stir well.
● Your maa ki dal is ready, serve hot with roti and rice and don't forget to top up some ghee while serving.

What’s up guys! So finally here’s my Home style Maa Ki Dal recipe! I had told you in my Dal makhani video that usually we do not cook dal makhani at home and cook Maa Ki Dal and absolutely I love Maa ki dal more than Dal Makhani any day! This is also the recipe for Langar waali Dal which tastes so so good. Do try the recipe & let me know which one is your favorite. :)

I had this in Cannuaght Place gurudwara after standing for 45 minutes in queue. After that i had many dal makhanis. Nothing can replace this dal for sure. Only missing ingredients missing are blessings and love of all those people working in langar seva. Hope after this corona kal is over, i will visit Gurudwara once again.

Hello Mr.Keer, firstly I would like to say thank you for sharing your recipes and process, really appreciate your efforts. I made the dish yesterday, it came out absolutely delicious. My wife insisted she's not a fan of black dal and would not eat this dish but ever since I requested her just to taste, she's totally hooked. As a matter of fact she's now claimed most of the dish for herself leaving little for me (I guess typical life of a married man 😂).

During COVID times, I think I am blessed to see someone putting all his heart and soul into food. Almost at the end you said “dil se banao” - so important even if one misses a couple of ingredients. Sanjyot, your recipes are amazing. I am an engineer in Canada but love to cook. The most important point, I feel, in your cooking is the simplicity of the whole process. I can actually get the feeling that you cook from your heart. You keep the explanations simple, don't make it complicated or show off with big words. Chefi really missing gurudwara alot ....after this lockdown get started really missed langer too 🥺🥺 that's blessings that seva at gurudwara truly gives a very happiest impact on us.... I have been in the US from 10 years… even being non punjabi, i would make sure to goto gurudware every week over my stay in Nj, boston, arizona, new york, north carolina and other mini places for darshan and enjoy rustic raw maa-ki-daal I cannot describe the homely feel in words. Feel at home every sunday at langar… God bless punjabi’s and their utter seva to all the people around.

I remember back when I was in East London 🇬🇧 I used to go to Gurudwara with my friends where we would eat Maa ki Dal with roti. I just doubled the recipe and I also added rajma to it. It is absolutely delicious 🤤 thank you.

Wow you just brought back pleasant memories of my fortunate to eat it in khandakar the pot they put it on embers on the tandoor after closing. Never got that flavour ever again. I ordered, tried to make but nothing like the real maa ki daal i savoured. I will try your recipe and I am sure it will be exceptional. God bless

Hello chef , I don’t use pressure cooker for this dal recipe, I soak dal overnight and cook dal in open pot and cook it for at least 3 hours on medium heat , it’s taste very delicious 🤤 my nani maa method 💕❤️❤️

Hey Sanjyot, tried this recipe, the longer version cooking in the open pan... It took me around 4 hours to cook on slow flame..... Result was awesomely delicious😋😋. Got lots of appreciation and praisings. Want to share same with you. Thanks for the recipe😃.

Will be making this today. Once I went to Amritsar and could have the Prasad. It's was so yummy that I literally miss it and am planning to go there again as well as will plan for a langar meal too.
