Hi Geoff, How perfectly yummy! I’ll be making this tomorrow … can’t wait. My dear cake tin has been badly neglected lately. It took longer to recuperate from my aneurysm surgery than I thought it would, but pretty good now so time to put the cake tin to rights, pop the kettle on, and get on with the business of living. Here is why this cake is called Madeira Cake. It is sometimes mistakenly thought to originate from the Madeira Islands; however, that is not the case as it was named after Madeira wine, a Portuguese wine from the islands, which was popular in England in the mid-1800s and was often served with the cake. How about that? Thanks for the video.

Yeh... first to comment... instead of last... Mederia cake is one of my favorites.... My mum lived on this when she had a bad stomach she said it put a lining on it... Well that was her excuse but because of this, this cake was always in the house when I was a child we would slice it and dare I say spread butter on it .. 😂😂😂Have a great weekend Geoff 💋

Hi Geoff it’s Hayley from Israel originally from Norwich, England, I made your coconut cake Friday and yesterday it finished, it was a success so thanku, what I wanted to ask u was also for the coconut and the Madeira can I use like 40-50grams less of sugar, or would it not come out properly, it’s sweet for us a bit Thanks geoff

Hi Hayley. I am glad the coconut cake was a success for you. As for reducing sugar in cakes it is possible. However sugar adds sweetness and moisture to the cake, since the sugar dissolves. So if you reduce the sugar you also reduce the amount of moisture in the cake. In some cakes that might be ok, and adjusting the baking time may help to keep it moist. For the Madeira cake I think you could reduce the sugar by 40g, which would be about 20%. Since the sugar is creamed with the butter, to create some volume, you might notice less volume as we. But I think you could try to reduce by 40g and maybe add at least 1tsp of milk to the batter to loosen it a bit(the recipe calls for up to 1 tbsp). Bake in the oven, but check after 50 minutes to see if it is done, then check every 5 minutes, until it is fully baked. It is a bit of trial and error, but once it has worked you will know for the future.

Hi Geoff - I've now made this recipe 3 times, and each time fantastic. Just wanted to let you know that in your written recipe on your blog you have 2 Tbsp. baking powder instead of 2 tsp.

Hello Geoff this looks lovely a good consistency and texture do you think l could add maraschino cherries to this and would they need to be halved and floured so as not to sink to the bottom of the cake l think my old school cookery lessons are coming to the fore here anyway have a good weekend it looks like Sunday we are in for some rough weather here in the UK let's hope the power doesn't go out in the middle of our baking take care and hold on to your chefs hat!!!!😊

I got my partner to make this last night, it was very nice though I had to turn my oven up 10°c as it was taking too long to cook, 1 1/2 hours.

HI Barbara. I am glad you enjoyed the cake. Oven do tend to vary in how accurate they are. I always keep a thermometer in my oven so that I can check the temperature.
