3ml Vanilla extract
3 egg whites
5g lemon juice (1 tsp)
70 g sugar (1/3 cup + 1 tsp)
85g cake flour (1/2 cup + 2 Tbsp)
12g cocoa powder

25 g sugar (2 Tbsp)
1/3 vanilla bean
70g milk (1/3 cup)
70g heavy cream (1/3 cup)
3 g powdered gelatin (1 tsp)
15g water (1Tbsp)
125 g dark chocolate (3/4 cup)
180g heavy cream (50% whipped) (3/4 cup)
125 g white chocolate (3/4 cup)
180g heavy cream (50% whipped) (3/4 cup)
● Decoration cream
100g heavy cream (1/3 cup+1Tbsp+1tsp)
10 g sugar (2 tsp)
5 g cocoa powder (1 Tbsp)
● Decorated chocolate
100 g tempered dark chocolate
