I prefer to bake the egg bites in the oven. I find the IP makes the finished bites too wet. Instead I place the silicon molds on a baking sheet for stability and easier handling. To create a moist and humid environment in the oven fill a large baking dish halfway with water and place that on the bottom rack. The moisture will help the egg bites cook gentle and make them soft and custard like. Bake 30 minutes at 300°F or until a toothpick inserted comes out clean. I do this all the time and they turn out great. And the cheese is pronounced ‘gree-air’. I absolutely love your recipes and RU-vid content. Thank you.
@@starrypunk20 The dish with water is a must. And you definitely need to babysit them as they cook. Just test with a toothpick. If it comes out clean they are done. If not, continue to bake additional 5 minutes and check. Repeat until the toothpick comes out clean. I’ve never had them rubbery using this method. They always have a smooth delicate custard texture. Good luck. I’ve found egg bites are NOT a set-it-and-forget-it recipe.
I cook 4 pounds of bacon, lay on cookie sheet and freeze. Then put it in bags to pull out whatever I need to crisp up when I need it. It also gives me the bacon fat to use. I love it!
I don't eat sweets at all. The sooner you can stop the sweets the better. I have not had anything with a sweetener in over 20 years. I started eating keto about 25 years ago (before it became popular). In the first year, I lost over 80 pounds and a few more pounds in the next year, until I had lost all the weight I needed to lose.... AND all the health issues I had. So for 25 years I have not had a single health issue and I have not gained the weight back. Also, I have a LOT of energy all through the day. I still STAY away from sweets. There is not a drop of anything sweet in my house.
Peter, you have inspired and motivated me. I just started a month ago and already lost 17 pounds. My doctor told me I was pre-diabetic and it scared me a lot. I am determined to change, and it is true you are what you eat. I am finding all these wonderful and exciting recipes and realized I don't have to starve or suffer. I was never into sweets because my mom raised me like that, but I love bread and today I am making my own low-carb bread whenever I crave it. But i agree with you about the sweetener. I know aspartame is very bad idk bout all the others. God only know what it does to our bodies. But they help me get off sugar and carbs for now. My morning coffee with cream and sweetener is my salvation for the time being. But I'm getn better and getn to only crave savory foods and meat and fat again.
Can't get over how GOOD the sausage biscuits were. I never really cared whether or not I ate them when not dieting, but now that I've cut back on so much, I'm finding this kinda like an indulgence! Glad I started out really simple and am now just learning how to cook recipes, so it now feels like I'm just learning to cook all over again! (PS this is much better than the original beginner casseroles I started out with!)
I've been making the egg bites in my instant pot and they are fantastic. I also steam mine but I steam it for 8 minutes with a 10-minute natural release and they're perfect
Just discovered your content today. Lots of great tips. When reheating in the microwave you are best to use a medium setting. Even though this takes longer, you don’t risk over cooking your food, especially when reheating anything with egg in it.
Thank you, thank you, thank you for the use of coconut flour instead of almond flour. Unfortunately, almonds in any form make my stomach hurt so I am always on the hunt for keto recipes that use something other than almond flour.

I tried to make egg bites in my instant pot once. I think I use the pressure cook method and they spilled all over. But I will try the steaming method and make sure to not fill them completely to the top. I’m considering the keto diet. If you don’t already you should have a Cookbook! I will check out one or two of these breakfast recipes.

Love the idea of the little pies! I could see adding a little maple extract to the batter so they'd be similar to McGriddles, and you can eat them with your hands, instead of a fork with syrup.
How can the “Love good fats” bars be “clean keto friendly” when they have 3/4 of your daily allotment of carbs (the one shown hag 14 carbs) ? Dr Westman recommends no more than 20 TOTAL (not net) per 24hrs.
There are different ways eat keto. Many people count only net carbs and still have success with weight loss and health benefits. Others (mostly those who have diabetes or prediabetes) benefit more from counting total carbs. If you count total carbs, then I wouldn’t eat these bars because they will take up most of your carb allotment. Most people that focus on total carbs are eating only fats, proteins and limited vegetables anyway.

Those sausage, egg, and cheese biscuits are bangin'! I conned my husband into making some GF gravey (not keto I know, but I'm not actually doing keto. More of a paleo-keto marriage). I couldn't waste that beautiful sausage grease. Omg the gravey was so tasty with these! I missed gravey n biscuits so much. 😭
I think the pancake pies could be baked in a mini muffin tin, and you could just sprinkle over some crumbled bacon or sausage or even chopped ham leftover from a holiday meal. Even bits of chopped vegetable - onions and peppers, for example, and sprinkle some tasty cheese on top. Theyd be so cute.

I love the idea of making stuff ahead of time, but usually I don’ my like how it tastes later on. I usually always go back to making it on the spot which is annoying. Most foods don’t taste good a week later.

I would love to find clean keto sweet bars that aren’t $2.33 for a small bar. 😔 It doesn’t sound like much but when you compare it to like .30 for a generic chocolate chip granola bar lol. Granted it’s crap but the price still has to come down before I think people will get on board.
You’ll never see a price drop of any significant amount on keto bars. The ingredients are just to expense. We’ve been spoiled with government subsidies on eggs, milk and all the grains in the cheap processed foods we eat. In reality the cheap granola bars should cost the same as keto bars. The government pays the farmers with our money so it cost less at the store.
