Thank you for putting the instructions in the description. I’m making this now. I always can bananas with lemon juice to use in baking later and have used them up to 2 yrs out with no problems.

The amount of sugar and lemon juice in this recipe bring the PH levels high enough to safely can this amount. I would not suggest canning the bananas on their own without either, or lowering the ratios (without using a pressure canner). Hope this answers your question. :)
Yes, you sure can. The sugar in this recipe, seems to be a very extreme amount. The amount of sugar, has nothing to do with wether the recipe is safe or not. Not sure why the video poster mentioned this. However, lemon juice should be added to each jar. This will make a big difference, in keeping the jam safe. Sugar does nothing
Great question! I'm not sure how ripe they have to be- I just make it with bananas to the point I like the taste of (if that makes sense). I like my bananas a bit softer (I find the flavour a bit better). Totally up to you!
