This episode was insane. Crazy how it was all taken in one shot. 1. Marcus working on the donuts instead of the cakes was definitely on him since he was told multiple times to stop. 2. Sydney has good ideas but she was also doing too much which Carmy said she is impatient. The time for those ideas isn’t there yet. Also insulting Richie’s daughter was messed up no matter how much she hates him. 3. Carmy shouldn’t have exploded, even tho he did have good reason because of Marcus not doing his job, Richie being annoying, Eibraham reading the review, and Sydney making refereethe risotto even though he said not to do it,

Carmy said the dish wasn’t ready and Sydney gave it to a critic without knowing. She started the to go tablet, but left it on so orders piled up. Then piled on Richie when he already gave up arguing and started to work. Then just bailed when shit piled up. She already tried to do a startup and fucked up because she was unprepared and now her problems surfaced again at the beef with her unpreparedness. That said Carmey blowing up when he could’ve just canceled the orders and turned the to go tablet off was uncalled for. His ego got the better of him and he tried to do the impossible and do the orders. No one’s going to remember their order being canceled so it wasn’t as big a deal as he was reacting to it for.

Man, she most likely forgot the to-go because she had to deal with Richie's bs. And piling on Richie was deserved. With all the nonsense he'd been throwing at her from the get go, I find it annoying when people say "he had already giving up on arguing" as if he gets to be the one to decide when they should argue and when they shouldn't. I just find it weird that people of colour or women, in this case both, are always the ones expected to take the high road. Richie knew he deserved it. That's why he didn't fight back. Not because he suddenly came to his senses. F Richie. Notice how he never came at her with that bs anymore after this. Sometimes you have to go low with people like him.

A small thing I think people forget is that Carmen also hasnt worked in this type of restaurant before. He is used to a higher level and was held there for so long that he legit doesnt know how to function outside of it. Not an excuse but a reason I think that adds to the chaos.

@SpikeSpiegel09
@SpikeSpiegel09 2 месяца назад
Also, my take on Carmy calling the critic a hack is that he probably knows that critic and knows that he isn’t a great critic, so his opinion isn’t worth much. But now that he mentioned the risotto, people will expect it on the menu and Carmy knows it’s not ready. So now that’s another thing he has to worry about. I think he believes a good critic wouldn’t have loved the risotto, based on his experience with critics in the industry.

This episode is my PTSD.... 4 years ago I was working at a restaurant in Vegas, f*ckin Keith Lee came thru the shop and next thing you know, we had an unthinkable amount of business for 2 months in arrow... Some people think that's good, but the people who had to wait 45-50 min. for a burger make sure to leave a bad review on their way out... 6 months after the hype went down, we ended up closing for the amount of *1 star reviews* left on Google and Yelp. Food reviewers can kill a restaurant. I ended up moving back to Chi and I'm doing good now but this episode brings back those days . I ain't even watching it.

I get a good bit of flak based on this opinion, but I gotta say it any time this episode comes out. A lot of people blame Carmy for this and I 100% disagree. Ye, he could have handled it better, but if any of you go out and own a dying family restaurant, have a huge day planned, and everyone around you is screwing you over, I dare you to not get emotional. Marcus was 100% wrong, Syd was 100% wrong, and then they end with “🥺 you hurt my feelings, so I’m going to quit on you with the mess I caused” Not to mention, next episode all of the blame gets solely put on Carmy, which just pisses me off even more. Carmy, Richie, Sydney, and Marcus were all in the wrong. Carmy had legitimate reasons to be annoyed and upset, especially at Sydney. But he most certainly didn't have to explode the way he did. He could have canceled the orders. My restaurant did it all the time, but his pride, ego and trying to establish the Beef got the best of him. Yes, Richie does push buttons, particularly Sydney. But he also can be solid dude who well go above and beyond for the people he love. And he does care very strongly about the Beef. The things Sydney said about his daughter was so not cool, he showed great control and restraint by not giving the same energy back to her. Marcus should have listen to his bosses and read the energy of place. He most certainly did not deserve to get snapped on the way he did, but now is not the time for dessert experimentation. Him leaving was also not very cool. I believe the team will regroup and be stronger moving forward.

11:51 - 12:22 I disagree. Wherever restaurant it is, you do what Chef says, She did went behind his back giving an *unreleased* dish to a customer without mentioning that it was an experiment, that little detail could have changed the outcome. Plus Carmen mentioned that he wanted to improve more and more but when the time come. Btw risotto to go is CRAZY, it's like asking for an Egg Benedict to go. According to the business model they have Atm, that would never worked.

Marcus wasn't even there to begin with carmy was valid feeling a type of way after telling her time after time not to do something and still she does it, plus the review came out maybe an hour before service so I'm sure there is no time to "unbottle" those feelings, its easy to watch something and pass judgment as if, if that was you that's how you would have handled it, come on guys you're better than this

So i actually did a thesis based on this show about something i like to call ''controled chaos'' and how this show inverts the role of how we see Chaos. As a viewer you might think that the fast editing, the different images interwining, the fast paced stuff is actually a lot of chaos, mess and disorder cause it feels like that, but it's actually the opposite. When they are cooking, they are in control, they control the stuff that is happening, the ingredients, the fire, the heat of the kitchen, but the show edited the cooking stuff tyo feel stressfull, but when the show slows down, and there's little to no editing and a lot of conversation and steady camera, that's when the characters are not in control and show who they really are and how they cannot handle situations, cause we focus on them. i.e. in episode 2 Richie and the phone call from his daughter. Richie cannot control the situation, he's on the phone he cannot do anything, but we never cut to his wife or children, we are focusing on him, same with Ayo's character in the store when Richie is complaining about Camry, The camera doesnt leave her and she's tries to controle Richie but cannot do anything cause richie is so focused complaining and Richie is going from side to side. These situations are the true uncontrolled chaos. Not the kitchen, and this episode is the epithome of that thesis, everything is one shot cause there is no control, from the moment Tína enters with his son, they cannot control that, and everything goes downward spiral from there, that's why there's no fast editing. This is uncontrolled chaos.

One of the worst fucking things, if not the one thing that made me completely hightail out the culinary business, is an inconsiderate manager of an establishment in over their head, believing that workers brought by the appeal of money ONLY exist to make the impossible possible and not be attentive of the damage they cause. I don't know how I stayed in a certain restaurant for a year when others (Greater chefs/cooks at that) left within a week, sometimes 2 days. Marcus had it coming and Syd was unfortunate but the mature call would've been shutting that tablet. Carmy sunk that ship but it happens to the best. Only up from here

This episode gave me second hand anxiety 😂😅 Like Carmy said last episode, she can be very impatient and pushy and I don't think Carmy unappreciative of her or anyone else in the restaurant. A lot of the things she does in the restaurant, is by her own initiative. Carmy should have most definitely not have snapped at her like that, but her leaving him and rest of the team to deal with her mistake, was most not certainly not the answer or the correct thing to do. I know Sydney is y'all girl, and I too like Sydney. But she was definitely wrong in this situation. Also a tiny rebuttal for Miss Samantha(Happy Belated Birthday!🎂🎂 I hope you had a very flavorful one🤍🤍) I don't think Sydney is to good for The Beef, I think she needs the restaurant as much as it needs her. It's a mutual, beneficial partnership I believe.

The one who is responsible for this mess, is the person who set up the new system and that was Sydm I love her but that's the truth. Syd doesn't do well with authority, we saw that multiple times through the show, she talks over Carm (who's the boss, they're not equal) and she's impatient, we saw that multiple times. As I said I love Syd but that mess is on her. Continueing to argue woith Carm when he, as the boss, tries to deeal with the problem is again a mistake of her. Obviously insulting Richie, rejecting Tina (someone with way more experience in the kitchen), and leaving in the middle of the mess she is responsible for is just extremely bad and a red flag for every employer. That being said, this episode showed everyone failing. Richie is the smallest problem this episode, sure he doesn't do well with the changes, but he even tried to help when shit went down. Marcus was just selfish af and Tina brought her son ignoring that this was a special day and added more weight onto Carmy who put it onto Syd. Carm didn't handle the situation well, he's used to work in the best kitchens of the world and working in a small sandwich thingy is obviously very different. As a cook I think you have to like the pressure and the chaos, you have to like to work through it as a team, but he obviously felt very alone here and that's why he snapped, yeeling and insulting people isn't an uncommon thing though. Is it nice? No but you have to be really tough to prevail and persevere in a kitchen. Great episode, I love the filmmaking of this one!

Syd was the backbone of that place and when she collapsed so did the place. Tbh I place the hierarchy of blame mostly on Carmy then Richie, then everyone else. Carmy because he allowed a toxic work atmosphere to thrive and it snowballed from there...and Richie bcos he's been pushing Syd since episode one...the person who's literally holding the place together....then she finally snaps and now he's suddenly calm and looking like a lost puppy. And I don't think she went too far either. He couldn't retaliate in kind bcos he knew he deserved it. It mirrors what Syd told carm in episode 2 "chef, you allow people to act like shit". Loved Tina this episode...when she said " that's not you Syd" If not for Richie constantly giving her crap I don't think it would've gotten that bad. Everyone has a breaking point. Also, black hawk down is a true story Sam. The battle of Mogadishu. I'm guessing Ibra experienced some of it. It's one of the shortest and most brutal battles the US Army ever fought. 150 soldiers (Delta operatives, seal team six and rangers), roped down into the very heart if Mogadishu and walked right into a trap. Then spent 36 hrs fighting for their lives against like 1000s of miltants.It's one of my favourite moments in history. I get so inspired listening to the stories of the soldiers that survived that day. It's probably why Richie likes the story too. The feats some of the soldiers pulled off that day made my jaw drop.

I am a sydney defender through and through and to this day, I fail to see how any of this was her fault. I've never understood why some individuals in this fandom tend to give so much grace to far more problematic characters, but when its sydney, she's everything but a child of God. Syd had a meltdown, fine, but you can't sit there with a straight face and tell me her outburst was sudden or unprovoked. It's been a long time coming if you ask me. Syd has had to put up with constant verbal harrasment and sexist remarks form richie throughout the season. Despite all this she's continued to keep things civil and chill because she professional, smart and rational. However, some of you pretend to not see any of that. Now onto carmy. See he's a business owner that doesn't want to act like one. He's constantly dumping random tasks on syd, he's barely on top of his duties and doesn't check in with his staff enough. Idc what anyone says, I believe the pre order fiasco was entirely on him. It was his job to double check and make sure everything was ready and set (in the episode you can clearly hear syd yell no when carmy asks her if she's ready cause he turned on the to-go tablet.) Also, he could have simply cancelled the customers orders and refunded each one accordingly (no need to go full psycho.) Syd might have gone a tad bit far when she dragged richie's daughter into the argument but I'd argue that shit happens and he lowkey had it coming. Was it mean and cruel, yes, was she at a boiling point, also yes. So pls ppl, stop acting like sydney killed your entirebloodline. She just happened to snap in that very chaotic environment. It was a gradual decent into madness and I don't blame her. PS: This goes out to the anti sydney demographic, put it down.

2:38 She might feel that way because it is correct! Carmy is being passive aggressive. This episode people tend to give Carmy a pass but while Sydney is aggressive and impatient, they're birds of the same feather. As you noticed, when Carmy gets mad at her he reverts to siding with Richie. I personally don't like Sydney's dismissal of the changing of a neighborhood or place. It happens multiple times and she's like 'get over it.' But she does have a good point about regulars who come in for one guy, don't really buy anything and treat the place like it's theirs while treating everyone but the one guy like shit. That happens at a lot of failing bars and restaurants.
