Hemun Avi Dear Heart, I can’t thank you enough for your kindness and insight. Originally I started Simple Food Simple Life for my adult and young adult grandchildren. I have not always had the luxury of having them near me as they were growing up. The times they were with me were times spent in the kitchen making food and having fun. Our home was a place they loved to come to and where they knew they were loved. I wanted to make some of the things on my channel that reminded them of days at ‘Granny and Papa’s’. It seemed I was always in the kitchen and they were always with me. Now their lives are busy and time with them is often precious few. But that is the way of most things in life. I grew up in Wisconsin. You seem like a neighbor I would love to stop over and have coffee with in the middle of January! Question: can I grate onions and green pepper in with taters to make potatoes o'brien?

I need to try this method but with sweet potatoes! I had to give potatoes up about 5 months ago. They bloat me something fierce so it was time to give up all things potatoes..but I dearly love hash browns so I am thinking there is no reason why I couldn't just make them with sweet potatoes :)
lisa s thanks for your comment and question. I boil the potatoes until they are knife or fork tender in the middle. It's hard to put a time limit on them as they were different sizes. Make sure when you shred them they are completely cool. Once you shred the potatoes and freeze them, they can keep in the freezer for at least six months as long as they are well sealed. I don't believe they will last that long as they can go pretty quickly LOL.
Lisa, you probably already know the specific answer to your question, but our family's rule of thumb for parboiling potatoes is 8-10 minutes. Just like she mentioned, be sure they are completely cooled before grating, less your hash browns will be mushy. ;) Good luck! :D

Hopefully my content has gotten better with time. If I don’t care for a video or perhaps it doesn’t meet my needs, I simply move on and try another channel. I like that your videos are a little longer than the usual videos you see on RU-vid. It's adorable and sweet and it reminds me of conversations with my own Mother and Grandmother about cooking in the kitchen.
