Beautiful knife :) I don't want to normalise everything I see on RU-vid, first off it's your shop. But I think you could streamline the handle making process greatly with a band saw. That's just a personal opinion, and it would be another machine to buy and maintain, but it would also extend the life of your grinding machine and belts.
