There's a reason that experienced carves don't use this type of knife with a fully circular blade. You want what basically looks like a bent sloyd blade. It revolves around efficiency of the cut ( the circular model has less contact surface then one with a flatter arc so it needs a lot more passes to move the same amount of material) and the extra utility one occasionally can get from the the narrow part is useful in spots. Always good to see -need a tool, make a tool in action however, so good effort!
Appreciate the video. I would mention that at least while filming and setting an example for other people, you really should be using a guard on the angle grinder.
