@acre homestead In case no one mentioned it, if the yeast is dead in a loaf of no kneed, not to worry! It just takes longer to make the bread. There is natural yeast in the air everywhere. All you need to do is let the dough sit, covered in an aerobic environment for 48-72 hours to ferment. It's ready to bake when it tastes like a sourdough 🙂 Enjoy future baking! 😁

@@his2praise790 Gluten free flour will have mixed results based on viscosity and "food" for the microbes. I've never looked into a safe way to do it for gf flour, but I know successful gf bakers have previously used added sugar to speed the feeding of the yeast during the normal time period. The interwebs may have a more instructive way to make a "lactofermented gluten free yeast starter recipe. " You could probably search that phrase and find something helpful. Be sure to check the site name for a credible source. Good luck with your starter! 🙂

To save on plastic wrap use, I bought half dozen good quality shower caps that I use for covering my bread as it rises. Keeps it moist, then can be washed and reused over and over. Even the free from hotel type will work if you just have them.

I just ask all my friends and relatives to bring me the free ones from any hotels that they stay in. Because they are free people can not seem to resist taking them but then don't know what to use them for. I bake bread all the time and can certainly use them!

You are so right, it doesn't matter when you celebrate, it's who you celebrate with. With 6 kids scattered across the world we pick a day and celebrate. To put pressure on to celebrate a specific day often creates unnecessary stress. Enjoy your Christmas celebrations, whenever they happen.

I love hearing where everyone is from and whether they use ricotta cheese, cottage cheese or the bechamel sauce in their lasagna. As I was reading each comment I noticed that everyone told what they used with respect for one another not disrespectful to peoples traditions!! How awesome is that!! Thank you everyone!! I actually use a combination of Farmers cheese and a scoop of cottage cheese for some moisture. But nobody in my house likes Ricotta but me.

I don't eat lasagne but it was one of my dad's favourite food along with bacon and egg pie. My Mum didn't particularly like cooking and stuck with the meals she knew how to make. Feeding people what they love to eat is my love language so I learnt how to make lasagne from cookbooks, youtube and TV cooking shows. I chose to make mine with a cheese bechamel sauce with a cheddar cheese which I also grated on the top level. Now both of my parents are no longer here I don't make it.

Yummy cheesecake! Little tip, what causes cracks is over mixing the cheesecake batter. "Fluffing" the cream cheese and whipping the eggs force air into the batter and stiffens the proteins. I mix the cream cheese and the sugar slowly and just until its smooth. I turn off my mixer between adding each egg. And hand mix in the vanilla.

Becky, I spoke with a chef from Italy. He said that they always make a bechamel sauce for lasagna in place of ricotta. Ricotta is an American idea.

I have never made lasagne with ricotta. I have always made it with a bechamel sauce. I'm not Italian or American either. Ricotta is a strange concept to me to use in a lasagne.

I'm from Eastern Europe and was so confused when people in US told me they don't like lasagna because they don't like ricotta or cottage cheese. Like those don't go in lasagna at all what are you talking about 😀 I guess every culture appropriates foreign dishes to fit their tastes. We russians have "Korean carrots" that Koreans have no clue about 😄

I've never been great at making pie crusts. They came out tough every time. I had literally given up. Resorted to store bought because they do it better🤨 Then I decided to try again using your tips of large butter pieces, not handling too much and adding more water to only the dry bits. They came out perfect! Thanks for saving me! Your an amazing cook 🤗

I learned from a vegan chef (back when I was vegan) you do not have to boil your lasagna noodles so you don't have to buy the no bake kind 😉 I have since made all my baked pastas thus way, including manicotti and stuffed shells. As long as it is a saucy recipe it will cook in the oven and the flavor is sooo much better!

I learned a long time ago (when I was working 24 hr. Shifts) that Christmas is the day you are able to celebrate it with family and/or friends. Glad you were able to be with them.

I'm german and this is the normal Lasagna I know (both in Germany and more importantly, from Italy). The first time i saw an american make Lasagna and get the Ricotta out I was really confused

@@courgette3401 lol, I'm in the US and have an old Better Homes and Gardens cookbook that uses cottage cheese instead of ricotta. I am going to try the sauce next time and may need to ask my niece in law about it. She is first generation Italian and her parents ran a restaurant

I make my pecan pie with a lot of pecans also. My secret is to stir it once it makes a crispy layer on top. I do that a few times while cooking so you get ooey gooey bites of pecans through the whole pie. I love your videos. I can't wait until the seed choosing "ceremony." :)

Becky, Please make some blueberry JELLY in a video some time. I have Crohn’s and can’t eat seeds and skins, etc. Jelly only for me. The only blueberries I have access to are from the grocery store. Jelly is one of the few “sweets” I can tolerate and I am so tired of grape and apple (the only flavors I can find locally). I have never cared for lasagna but I am going to try the danish lasagna. It looks very good. In addition to the Crohn’s, I also lost my husband (best friend and true love) this past year and am also trying to figure out this cooking for one. I think that doing freezer meals in small portions is a good route for me. Thanks for the education and entertainment these past few months.

There should be a recipe in the pectin box for jelly as opposed to jam. Also, check out fecal transplants for Crohn’s. I read that there is a children’s hospital in Southern California that is having great success with it. Vets use it for animals, but not many doctors will do it for humans yet. I wish you well?

I use green painters tape and a sharpie I keep in my kitchen to label and date everything that goes into my fridge or pantry. It’s so quick and easy to tear off when you’re done. Love your videos!

I've only ever seen one lasagna recipe that might top my mom's. Becky this one had my mouth watering🤤. I cannot wait to try this! On another note, I made your ginger molasses cookies, the snowballs, the palmiers, the saltine toffee and the peppermint bark. Everyone demanded that I make them next Christmas too. I loved hearing about your 4 year old nephew! My son is 4 and he puts your videos on himself! He does not like your 'talking' videos lol. (Gardening, or DITL), but he loves your chickens and cooking videos. "Mama! Becky is on! I will pause it for you and wait." We were sick over Christmas as well. I'm glad everyone is doing better and you still got to see each other. Merry Christmas!

Your pecan pie looks amazing. I have never tried pecan pie, I think I will make it for our New years dinner. Becky, I noticed you had foil in the bottom of oven on the rack, foil can cause issues with the element\heating if it touches it while cooking maybe that's why your top oven is not heating properly. I bought a reusable oven liner for my drips and spills in the oven....best thing ever.

Hi, loving this recipe. To remove the dark stain of the bottom of pot spread salt and baking on the spot area, than spread dish soap and cover with a damp napkin-put vinegar on top of napking and let it sit for a bit. You’ll be surprise hope clean your out gets

I take stains etc. out of my enamel teapots by filling it with water and adding 1 tsp. cream of tartar and bringing it to a boil. I was absolutely surprised at how clean it came. It would be worth a try on this pot.

I keep my 'using it now' yeast in the fridge and my 'spare' yeast (Costco blocks) in the freezer til needed. Never have yeast go bad that way. Also, maple syrup is a wonderful replacement for (high fructose) corn syrup and adds a bit of deliciousness that corn syrup doesn't have! Fun video!

You should score your bread with a razor blade when you put it in the dutch oven, you will get a better oven spring. (and you can give it a pretty design)

If your dough doesnt rise you can always knead in extra yeast and let it rise again. Love your videos 😊❤

Hi Becky. I just wanted to tell you that finding your channel is one of the things I’m very thankful for in 2021. I have learned so many things. I’m always looking for ways to be more efficient and save money for myself and my family and you’re helping me do that. Today I’m especially grateful for having watched you for the last couple of months. After watching you cook with an electric roaster I convinced my sister and mom to buy one between the 3 of us, with 3 households composed of 4 people total, sharing made sense. Today we used it for the first time and we had the best, moistest turkey ever and it was cooked so fast that we went right into making 18 quarts of soup. The amount of time and electricity it has already saved us makes the 60$ we spent on the roaster more than worth it. Thank you! I’m looking forward to the new things you have coming. Happy new year!

I made the exact same thing for our Christmas dinner. I usually use the no cbook lasagna noodles as well but I tried a new technique and it was amazing. Take a Pan and fill it with hot water and put regular lasagna noodles in to soak for 20 to 30 minutes before you assemble. The noodles covered more effectively and were more noticeable in the lasagna compared to the no cook lasagna noodles. You do not need to cook lasagna noodles just soaked them. You should try it sometime it's so much better than the no cook!

You don't even need to soak them (the regular noodles). Just assemble the lasagna, adding a small amount of extra water to the sauce, and refrigerate for 6-8 hours. If you freeze before cooking, you don't need the extra water, but I don't add cheese on top until 15 minutes before done.

The pumpkin was too wet which is why your cheesecake took so long to bake. Next time you use fresh pumpkin drain it overnight if you can. I use a Greek yogurt strainer (Amazon) and it makes the pumpkin nice and dense without all the extra liquid. Happy cooking!

I make my lasagne almost the same, didn’t know there was another way! In England we do tend to use less processed products in our cooking, always make my own bechamel sauce for it and Mac cheese sauce too ❤️

I also use bechamel in my broccoli casserole. Recipe calls for canned soup. Mine is soooo much better!

Happy Holidays to everyone in your family, I made my Christmas Ham yesterday because I was diagnosed with pneumonia and had 2 different rounds of medications so hopefully I am on the mend, but I wanted to smoke my ham so while I had my smoker up and running I also did 2 slabs of ribs,, 4 salmon fillets, 6 brats and 4 ribeye steaks all vacuum sealed and frozen, ready for meals throughout the winter, and of course my 13 pound ham cover in fresh pineapple and glaze, the ham bone with some meat is in the freezer waiting for a big pot of green beans, 2 more big chunks of ham are destined for pinto beans and breakfast meals and a huge zip lock bag for us, my grandson and I, to eat on the next couple of days and whatever is left after 3 days I will freeze also to be used at another time. I love cooking ahead in bulk and having readymade meals because my grandson is a full time student, a junior in college, he also works as many hours as he can and is a Youth leader in Church and works out in the gym daily, he’s a beautiful beast at 20 and always hungry and I thoroughly enjoy feeding him delicious meals. At 62 I can say that I have learned a lot of things watching your videos and you constantly motivate me to do more to help with our food situation, I also do micro greens, sprouts and hydroponic herbs and lettuce indoors throughout the year. Thank you for sharing your knowledge and again Happy New Year.

Oh Becky, I’ve been wanting to make rustic bread for the longest time. I love it so much I’d eat the whole loaf by myself. I’m diabetic so I refrain from making it. That sure looks delicious! I which you were my daughter I love to cook and make new things. My kids are vegan and vegetarian so I don’t cook fo4 them.

I started watching this about 2 hours ago (10:20 pm) and when you started chopping vegetables, I paused and got up and started making some chicken 🐔 broth to can over the next couple of days. I'm a night owl, so by the time I go to bed in the morning, it will be ready to cool down. I may even go and get some more chicken thighs (on sale for $.99/lb bone in skin on). Thanks for the motivation! LOL

Not criticizing but the next time you make a pecan pie try browning the butter you put in the filling and toast the pecans before chopping. The difference is amazing. I'm a 62-year young lady born in Tennessee. It is a southern dessert.

I having been making this type of lasagna for years. It is always a crowd pleaser. However, I add a layer of pepperoni for a little extra punch. Happy New Year to you and your family!

if you remove celery from the bag and wrap completely in tinfoil unwashed it will last 6-8 weeks until you use it

I’ve noticed in watching your videos from some of the beginning ones to more current ones is that you’ve slowed down and started taking your time while filming and cooking which I believe is nice … when not going to quickly less spills/mistakes etc plus easier to follow 💕💕💕

Bolognese and cheesecake sound wonderful. I love my pecan pie recipe exactly the opposite of yours, lots of custard and whole pecans on top. I bake mine extra long and the custard ends up like a toffee.

Also if you look up pie drip catcher pan, I love these for pies, casseroles, and even bake my cheesecake on one of these. The whole in the middle allows heat to reach the center more for even cooking (and often doesn't take as long in the oven)

Important note about Bechamel sauce, that you keep stirring as Becky did , so it does not stick to the pan or burn. If it does you have to toss it out and start over. ALSO: Huge Note, In Italy they have different regions, Regio Calabria, Toscana, Emilia Romagna ( Tuscany etc). In Tuscany they do not use ricotta, that is more of a southern type Lasagna. Just a tip to those who think all italians make lasagna with ricotta.

This is by far one of my favorite videos. I love to watch baking videos especially baking bread and you do it effortlessly. I recently bought a dutch oven so I'll try the no knead bread. Oh btw, I've used lasagna noodles straight from the box and it cooks perfectly! You may need a more liquidy sauce but it turns out great. Would love to see more bread baking and cake making videos. Thanks so much for all your thoroughness and dedication on your videos!!

I first had Lasagna Bolognese with Bechamel sauce a few years ago in Italy and, my goodness, that Bechamel sauce is a game-changer. I don't cook or garden anymore but I love all of your videos. You're a great teacher, Becky. Thank you for being you and Happy New Year!

Everything looks delicious ❤️.. From what I know when making Chala bread, yeast shouldn't touch the salt, only the sugar. Also, water should be around 125 degrees,.

Great recipes here. I always, or pretty well always make a bechamel in my lasagna as I only get to town every couple months and never have cottage cheese or ricotta on hand. Your recipes always look so good and I have tried a lot of them and they. taste good too
