Making an oyster knife, Handmade oyster knife, Oyster knife making
G'day Everyone and welcome back to the channel.
Today I am making a Oyster knife. For this bit I need to do a Double bevel grind also called a Dagger grind. This is a tricky grind to do and the best way to do it accurately is with a Knife grinding jig. I use a jig from Nordic Edge here in Australia, it works perfectly with the need to grind 4 bevels on the one knife. Because it is for opening oysters I hand grind on a chisel tip grind.

Some of my earliest memories are of my grandfather sitting on a bucket with a bushel bag of oysters shucking them. My Mom has one of his oyster knives in a frame with his picture. So oyster knives are special to me and this one is beautiful!

Thank you so kindly, It is a bit of a work in design for me, never done one before and the customer gave me the base idea what they were after. Recycled some timber for a joined handle to keep it cheaper, but heck that came up a treat. Basically tried to keep it as cheap as I could as they are my testers.

Wow, that color is great! I wasn't sure how it would look when the stain was going on but it came out fantastic! You must be so happy with this one!

I was tossing through the offcuts pile to find the timber for the handle, came across these 2 and knew it was meant to be. The darker front with the lighter rear and both timber’s have hints of red, perfect match.

When we wintered in Florida my grandpa Would go to the beach before dawn and bring home a 5 gallon bucket of oysters. Together we would sit on the front steps and shuck them. I don’t remember eating them just him shucking and me Playing with the shells.

No official opening date yet mate. But looking like December, Terrie and I will be having a chat to work it out and then as soon as I can book I will, probably January or February. The Lord provides the skills mate I just put them into practice. God Bless you guys too.

I grew up on a shrimp boat. We went dredged oysters one season. Opened a few. Not an easy job. Glad we did not do that another winter.

G'day Eunice, I have only done it a couple of times and would never want to do it as a living. Would much rather spend my time grinding, although that's not always a lot of fun. Wow grew up on a Shrimp boat that would be so interesting, I do love my time on the water but been a few years now since I have been out at all.

Keep the point and that would make a nice every day toad sticker. I am constantly loosing my pocket knives. To be honest, I also lose my phone, glasses and clicker repeatedly, daily. 💁‍♀️🤦‍♀️🤷‍♀️

Couple of reasons for no point, daggers are illegal in most if not all Australian states but oyster knives aren’t. Also the chisel point should work better to pry the oyster open. Lol I have been looking for a set of prescription glasses for a month

Oyster knife. Why is it called that? I mean we have oyster shuckers but you CERTAINLY wouldn’t want to use you beautiful deadly SHARP knife for that….

lol Brother you are handy to have around when the depression bites deep, you know I never in my life thought I would actually get to use the term "casting pearls in front of swine" in context😉😂 there is still probably 1/128th thick of steel there on the edge, some do use a sharpened blade and I will check with the owner which they want before postage. It is going to be used for restaurant shucking in front of clients and they often want the sharp blade to sever the muscle cleanly in that case.
