Making an oyster knife, Handmade oyster knife, Oyster knife making
G'day Everyone and welcome back to the channel.
Today I am making a Oyster knife. For this bit I need to do a Double bevel grind also called a Dagger grind. This is a tricky grind to do and the best way to do it accurately is with a Knife grinding jig. I use a jig from Nordic Edge here in Australia, it works perfectly with the need to grind 4 bevels on the one knife. Because it is for opening oysters I hand grind on a chisel tip grind.
