Greetings! Canning season is in full swing in my neck of the woods. Today I am making and canning, homemade Ro-Tel. For those of you who may not be familiar with Ro-tel, it is a delicious combo of tomatoes and green chilies. Usually used to enhance a chili recipe or most popularly to add to a nacho dip along with some processed cheese.
I was able to source some Hatch green chilies and for anyone who is from the southwest knows, this is the time of year for those mild, fragrant chilies. In New Mexico and Arizona you can find farmer's markets overflowing to the brim with bushels upon bushels of these beautiful green chilies. You will also find chili roasters which look like large mesh drums turned on their side and set over an open flame, usually a gas or propane flame, but I have seen them done over wood fueled fires. The roaster will fill the drum with fresh Hatch chilies and begin to turn it, tumbling the chilies over the flame, making them dance. In a short amount of time the chilies have turned black and blistered. This is when they are turned out and allowed to steam so the skin can be easily removed. In many cases, the peppers are placed in plastic bags and sold while hot. By the time you get them home they can easily slip out of their skins. Such fond memories of the southwest and the smell is intoxicating. Nothing like chili season in New Mexico and Arizona!
Home grown tomatoes are the base for my Ro-tel along with those green chilies and some onions. In order to maintain the proper PH for waterbath canning, I have added some white vinegar (you can use cider if you choose) some sugar and a bit of canning salt. Simmered a good long time and then jarred up and ready to process.
I am using Tattler lids for the first time today. After many years of wanting to try them and actually having been gifted a couple of boxes over the last couple of years, I was just a big chicken. Just like with my pressure canner, I was going kicking and screaming. However with recent changes to the Ball jar lids I have become aware that it was time to give these Tattler reusable lids a try. I will be doing another video with my thoughts on the process. In the end I love them!
So that is how I made my homemade Ro-tel tomatoes and chilies. Super simple and delicious. I grew all of my tomatoes and spent less than ten dollars on the chilies and onions. Over all, I am very pleased to now have 16 pints of this homemade goodness on my shelf. It will be used in so many of our favorite meals!

Hi Noreen, Phew am I glad I'm not the only obsessive one about scraping the bowl lol. I watch all the cooking shows on tv and on YT and I see all the waste because they don't scrape the bowl lol. I'm pretty sure I have OCD in the kitchen hehehe. Never heard of this in Australia but I want to make some for pizzas, chilli etc. Michelle

Was gifted huge box of tomatoes. Giving your recipe a try. I have been using tattler for about a year. You can write in Sharpe on them. You use a fresh Sharpe swipe across and wipe off old writing, you can also use denture cleaning tablets to remove Sharpe and other stains like tomato.

I'm a Texas native and we have had Rotel all of my life! The original & mild are my "go-to's". These are great for pot of beans, Mexican rice, chili, a base for hot sauces, spicy spaghetties (when one can not afford to make or buy Italian sausages), burrito meat bases, baked/roasted potato chunks, Southwest corn breads/muffins, for when you make 'stoups' (not quite a stew and not quite a soup), etc. The mild is really good for queso. Just add milk and cheese of your liking. It's most commonly used in Velveeta. Now, I have been eating hot for most of my adult life and I can tell you that I can not handle the spicy flavor. I taught myself how to cook and Rotel was a staple, because we could not afford fresh veggies. I was cooking on $35 a month. Lots of beans and rice and...Rotel! Thank you for this video. It hits home!

YES because hot tastes like they only added cheap salsa to the mix. Trust me if they made actually spicy Rotel with its original flavor. Then it would be hot all the way.

I used a combo of poblano and bell peppers and 1/2 beefsteaks and small tomatoes. This is what I grew this year. It does have more liquid but has a great flavor. I Your recipe is a staple in my pantry. I use this for extending spaghetti sauces, chili, veg soup, and it delicious instead of water in rice.

I love this idea! A couple of things I have learned about Tattler lids is that you do tighten the rings when you take them out of the canner. Also, you can write on the lids with a magic marker and then take it off we polish remover. I have done it several times.

I have bought Rotel for over 40 years in the South in the winter, and the North in the summer, great idea, I buy the mild, and use it with a can of petite diced tomatoes because I cannot have the heat, but I love the flavor.

Thank you, I was going to the store to buy some Rotel for a pasta salad I wasn't looking for this recipe but I just grabbed my tablet & this came up in my recommended videos! Also, I made your strawberry cheesecake ice cream, its much better than the popular store bought brands! Rotel is sold in different varieties where I live, my sister likes the cilantro and lime flavor. And you are right, it is available nationwide.

I'm so glad you shared this recipe. I had been racking my brain to figure out how to make Ro Tel as this is something that is used lots buy our family in Chili, Cheese Dip and just about anything we use tomatoes in. I've never been happy with the off brains and this will be a big money saver to our 3 households. Enjoy your channel and the canning and hopefully next year I will have a pressure canner and attempt more things if I can get past the fear of the thing. Thanks for all you do.

My fave way to use Rotell cook bit of garlic in dab of olive oil pop in jar or can of Rotell and add it to some cooked long grain rice. Super simple delicious Mexican rice. My mom always used peppers, onions and stewed tomatoes in Mexican rice growing up so I just found way to simplify it. Lol also garlic I think adds bit of freshness to the veggies. Thought I'd share!!!

Noreen, you can use a china marker ....wax marker... on the lids and it will wash off when you wash the lid. Teresa

love this one, FYI if your lids are a plastic you can still use a sharpie on them just wipe it off with rubbing alcohol when you clean them.

My hubby loves Ro tel we live in Ohio on the ohio wv border and we use ro tel for everything.but my hubby loves ghost peppers and habanero;s I will try them this way. Thanks for the video.

To what I understand if it’s not grown in hatch it can’t be called hatch Chile even if you got the seeds from a hatch Chile 🤷‍♀️ nice video.

You probably already know this Noreen But after you take your TATTLER’s out you have to crank down that lid as tight as you can. If you didn’t do that step that might explain why two of them did not seal ❤️🙏❤️. Thanks for the great video and hope you end up loving the TATTLER’s as much as I do

Awesome presentation. About the Tattler, you need to tighten the lids after it come out of water bath. That’s the rule.

I love your videos and this Rotel recipe. I use Rotel a lot, for black bean soup and such. So nice to have this recipe, I had no idea it was so simple. I have got to try it myself. I love, love, love the Tattle Reusable Lids & Gaskets. I have never had a failure. I actually am shocked any of your seals took. The one lid I saw you put on was way TOO LOOSE. I heard two schools of thought on these Tattler Lids. 1)Put on ring, gasket then Finger Tighten, THEN Back Off (Counter Clockwise) A QUARTER OF-AN-INCH. or 2)Place jar filled with food & liquids on a flat surface, Again - put on ring, gasket, lid and then tighten the ring until the whole jar moves. Stop. It is tight enough.

I use a dry erase marker on my tattler lids...just have to wipe them off before putting them in the dishwasher or the ink will set.

there is a good video on youtube on tattler lid fail. We tend to forget that the product coming out of the water bath can still be boiling in the jar and that if your tattler lid has not sealed and the ring does not stay on the jar you can end up with a severe burn. The changes in the manufacturing of metal lids is making me think I will have to try the tattler lids. Thanks for the video.

I love the cilantro lime Ro-Tel, but it's just a tad to spicy for me. Never thought about making my own....Good idea! Thanks.
