Homemade jelly is the best, and my kids favorite is blackberry. We picked several bags along the side of the road near our house over the course of a month and got over 2 gallons to make jelly. I froze the berries until it was time to make the jelly, or when I had enough. You want to have at least 5-6 cups of berries to start with to get juice. Cover berries in sauce pan with water snd bring to boil and cook for around 30 min. Bring heat down snd let simmer for another 20-30 min.
Strain juice using cheese cloth or thin cotton dish towel.
For the recipe you’ll need the following:
6 1/2 cups sugar
4 1/2 cups prepared juice from berries
1 box Sure Jell (fruit pectin)
1/2 tsp or little more of butter
1/2 pint jars with new lids and rings

Just finished my first ever batch of wild blackberry jelly. Followed your instructions and it came out wonderful! I also have enough juice to run a second batch. It was a lot of hard work picking all those blackberries, but oh so worth it. So rewarding. Thank you!

Awe I’m so glad you had such great success. And yes picking those berries is hard work! It is also great you have extra juice for another batch. I usually cook all my berries at once and get two big bowls of juice from it that will make 3-4 batches of jelly. Getting the juice is the hardest part.

Thanks for the great video. Your instructions are very clear. If you have a steam juicer you'll find it really easy to juice the blackberries. As long as you don't mash the cooked fruit in the top section of the juicer you'll have nice, clear juice. Let the juice that's been collected sit over night so all of it drains out of the cooked fruit in the basket of the steam canner.

@@lifewiththewalkers2797 You could cook down the fruit, strain for juice and not have diluted it with water. Or use a steamer, which doesn't add water to the juice?

@@bob_frazier thank you for this suggestion. We don’t have a steamer but just use what we have. I’ve never had jelly that wasn’t full of flavor using this method but do what works best for you.

I have used several things before but my favorite is a cotton thin flour sack type dish towel I got from Walmart. It’s easy to wash out every time and strains it better than cheesecloth.

@@moon699ik5 I just wash it on hot with my regular towels. It doesn’t stain it if you rinse the juice out after straining the fruit then wash soon after. I hope you can find the towels they’re perfect.

The towel, you used to strain your berries, is that a flower sack dish towel?

Yes. It’s just a thin cotton flour sack cloth I found at Walmart. I prefer it over cheese cloth bc it holds up better and strains things clearer.

Since I use a funnel that goes down in the jar a little bit it keeps anything from getting on the top. I’ve never had any excess jelly get on it using the funnel I have. But yes if you get anything on the top wipe it off before placing lid on.

@@lifewiththewalkers2797 Just saw someone pour their batch into a plastic pitcher and use that. I made two batches this morning using your measuring cup method, still messy, but better than a ladle!!!

Rinse well fresh berries, blend in blender pour into fine mesh strainer, add a small amount of water to rinse blender and pour this liquid as well into strainer, then proceed to make the jelly/jam.

I wish the sure jel instructions had a frozen fruit category. I had a bunch of frozen strawberries that weren't as solid as fresh and had a lot of juice like what you started with. I decided to do the average amounts between jam and jelly and it turned out perfect!

Hello, you wash your jars in hot, soapy water and rinse. You don't then sterilize them by boiling in the water bath? I think the old-fashioned recipes call for that but I'm looking for the simplest recipes. If that step is not necessary that's fine with me! As long as the product is safe. 🍇💜

I always wash brand new jars in hot soapy water. Whether you place them in hot boiling water to sterilize is your to you. I just prefer to keep my jars hot before placing the liquid in them and this is the best way for me to do that.

Thank you for posting this video. Me and my dad grow blackberries in our backyard. They are our special blackberries. Well I say special to us anyway. Because we got these from the woods behind my Maw-maws house. And when Daddy and Aunt Jane were little they would pick them. And my sister's and I would pick them when we would visit her. Long story short Daddy and I dug some up and brought them home. We have two rows of them now. And they pretty much grow like crazy. So yeah I need different recipes so I can use them up. We had several gallons Frozen. Thanks again for posting.

How mAny cups of berry’s did you need for 9 jars?

When I make jelly I usually will cook down 8 cups of berries and from the juice I get from that it will make two batches of jelly. But for only one making of jelly you can do 4-5 cups of berries. Cover with a little water and cook and strain juice out. The water on the berries is what will turn into your juice.

love your video and how you strain your juice. I am gongin to try this. I have been using cheese cloth and work fine but I like the idea of a finer strain. I make Eleberry, apple, Blackberry and currant Jellies and Jam

Same for me. I use to use cheese cloth but the cotton flour sack dishcloth works much better. Any pull I have leftover pulp I give to my chickens and they gobble it up.

Thank you for this wonderful recipe. I believe I will try it in the near future. I always wipe the top of each jar with white vinegar before putting on the lid.

If my jar tops get jelly on them I wipe them too. But they usually stay clean.
