Brad Leone joins Ryan Callaghan in the MeatEater kitchen to cook up a bone warming recipe perfect for a cold and wet spring afternoon. Brad and Cal had plans to recreate the recipe from The MeatEater Outdoor Cookbook by substituting bear meat for turkey. But when the freezer burn thawed off, they found themselves with a bag of beaver meat instead. When life hands you lemons, make beaver chili verde.

I worked at a dog food place that handled beaver meat and I can personally say I don't see the appeal to eating beaver. It bleeds like crazy and is a greasy meat... Edit after watching them cook that beaver I change my opinion

I had to look up why the beaver leg tripped Brad up so I compared a chickens knee to a beavers hhh. Chickens have a very small patella (kneecap bone) and not a huge bone structure there while beavers have like SEVERE knees with a substantial kneecap. Feel free to correct me but at least I have seen beaver knees now ig hhhh.

Well, that’s an important lesson in life, not just freezer management: nobody who was expecting to eat a bear wants to end up eating beaver, and nobody who was expecting beaver wants to be served bear.
