i think a great idea and the person about the rennet being to much water I don't think you would have over looked the measuring of the water but if did hey be a problem also play with your drops!! being nervous 1st time maybe the drop could have been longer I watch 3 times and I would say the drops could have been bigger but still IT CAME OUT GOOD just needed a little more play and i think the water and the drops are IT

If the recipe calls for 3 drops of rennet diluted in 2 Tablespoons of water, add the rennet to ONLY 2 Tablespoons of water. You added the rennet to a bowl of water and then scooped out 2 Tablespoons after that. Your rennet was too water diluted. You need the full 3 drops of rennet for the cheese to coagulate properly. Less than that causes the cheese to be too milky. Hope this helps!

It was to add three drops to a third of a cup water. Then two tablespoons. Think she should weight to do that part until right before she adds it to the milk. It was setting while the milk warmed up and it deteriorated. ❤

I thought each jar of milk was2 quarts and I thought you poured in 3 jars which would be 6 quarts of milk. That would need more rennet for the extra quart. There is such a few ingredients that if it isn’t the buttermilk or the rennet then the technique must be flawed. Maybe try using a tighter woven cheesecloth or checking the temperature pen for accuracy. Good luck, happy you got better results!

Brooke, your cheese must be good. Jason's reaction when he added cracker and pepper jelly tells it all. He's so cute when he likes something - he gets that smile and always talks about how good it is. I love watching him enjoy the treats you make. So glad Capri is doing better. She has to stay healthy so you can use her milk. Thank you for sharing your successes ( and your not successes).

I was intimidated by the rennet recipes, so when I came across this simple recipe for Farmers Cheese I was all in! Now I make it at least once a week. Oh, I have mini goats, so it’s usually a gallon at a time. Simply heat your milk until it is just about to a boil, then add 1/2 Cup White Vinegar per gallon to your milk. Stir gently until curdles form. Remove from heat and cover. Let rest for about 20 -30 minutes. Then do your straining through a cheesecloth and hanging. I only hang mine for about 30 minutes. I give it a light squeeze and it’s done and ready for seasoning! It is so easy! My husband absolutely loves it! It is crumbly, but you could run it through the mixer like you did to make it creamy. Please give it a try, I think you will be happy.😁❤️

Brook, I watched Homesteading with the Zimmerman’s and she said when she makes cheese she found that it worked better for her if she waited to mix up the rennet until right when she needed to add it to the heated milk. Otherwise she had problems forming the curd. ❤

Hi Brooke, its the rennet ( animal or vegetable). Must be used within 15 minutes of mixing with water. After 15 minutes its deteriorates.

I make cheese 3-4 times a week. What type of cheese are you trying to make? Each type of cheese uses different methods. From 3 gallons of milk I can usually get more than a 3 lb cheese. It looks like you are losing a lot of the protein because the whey is coming out too white - it should be clearer with a yellow tint. I went back and rewatched the video again - the problem is over diluting the rennet. Use 2 tablespoons of non-chlorinated water in a glass dish and add your rennet to that and mix well. Then add the whole thing to your milk mixture and stir up and down motion to mix well. This method should help set a better curd and give a better yield. Also may want to let it sit for 8-14 hours - you can check you curd set with a knife - and when it looks more solid then strain into a cheese cloth lined colander, then hang as you did.

That was the first thing I noticed was the leftover rennet water left in the bowl. She needs ALL three drops in the mix for that amount t of milk. Thank you for catching that.

I think it’s because she mixed the rennet and water before❤ she started warming the milk. So it was setting there deteriorating for a while before she used it.

I’ve never tried to make cheese but I do a lot of canning. So just a thought…. Cheese cloth quality varies so you may need a different maybe a tighter weave! It’s just a thought. I love how Jason is always so supportive in your projects and how he loves loves the things you make.

That reminds me of my time as an elementary teacher. We seldom got good positive feedback from the administration but when you got special little notes from students and parents, it made you feel good about what you were doing. I am retired now, and I still have dozens of those happy little notes. Maybe you can make special little frames and make a bulletin board to display the notes.

I'd put up a solar panel to keep a battery charged run an arduino that would use a strain sensor to tell if there's eggs in there or not. Then a screen would say no eggs or eggs. Is that too much?

I think the way of mixing in the rennet has something to do with it. Most tutorials I’ve seen they use a flat ladle with holes and try not to break the surface of the milk when stirring.

Brooke you need to use a liquid measuring cup for your butter milk not a dry cup measurer . That can make a bit of a difference.

So very glad that Capri is responding so well to the supplements and alfalfa. I knew some goat dairy farmers a long time ago who also had nubians, and they supplemented pregnant and lactating does as a matter of course. Love your cheese journey. Thank you for sharing your lives with us.

I enjoyed the video and I am pleased that Capri and the little chics are doing well. I had to smile at the cat enjoying the morning treat. It reminds me of many years ago when I milked my goat. I would say all drops are not equal. Not that I have ever made cheese. But as soon as you said drops I thought some drops are bigger than others. Love that you feel well enough to live your dream after the hard year you have had.

Hi Brooke, you may not have gotten a lot of cheese but the creamed cheese you made sure made Jason's day brighter...anyhoo, as to the rennet, may I suggest that as you only need three drops in 2T of diluted water that this be the only amount of water you need! Or try using white vinegar, apple cider vinegar, or lemon juice. You’ll need 1/3 cup fresh lemon juice per quart (950ml) of milk or 1/4 cup vinegar. (I use white vinegar) Good luck with next week's batch 💗🌸💗

We hand milked our cattle and goats and would squirt the cats. We poured ours into wide mouth pickle jars so we could skim off the cream to make butter.

Brooke your getting there! Jason's reaction to a cracker, cheese and pepper jelly. I love watching him enjoy a tasting test. (He needs a shirt official taster.) I'm glad Capri is doing better, as she gets healthy your milk will improve?! Loved watching you make cheese, better next time!! You all are so awesome.

Hey Brooke , My Dedaddy always kept the bowl of water in the fridge until the pot of milk was hot an ready . Then he would take it out an add the rennet to the COLD water then immediately add it to the milk mix it up an let it set up . He would tell us youngins that we can't make jello with all hot water an Cheese is the same way . I don't know if that'll help but I'm hoping it does . Crackers out & you'll have cheese no Doubt . 😁 God Bless y'all 💯 🙏 ❤ 🇺🇸

My grandmother and aunts in Europe gave cow milk to cats all the time and I never saw them have any problems with gas or bloating. They loved getting warm milk in the evening right after milking.
