This is part one of a delicious dessert: Profiteroles with lavender honey ice cream. In this video Linda makes the ice cream.
Here's the recipe (adapted from David Lebovitz):
1/2 cup of good local honey
1/4 cup dried lavender flowers
1 1/2 cups whole milk
1/4 cup sugar
Pinch of kosher salt
1 1/2 cups whipping cream
5 egg yolks
Heat the honey and stir in 2 T of the lavender flowers. Allow to steep for one hour at room temperature. Whisk eggs yolks in small bowl.
In saucepan, heat milk, sugar, and salt. Pour cream into large bowl and set strainer over it. Slowly pour the warm milk mix into the eggs yolks (very slowly to avoid cooking the egg yolks). Return the mix to the saucepan. Stirring constantly with silicone spatula, cook on medium heat until the mixture thickens somewhat and coats a spoon. Pour the custard through the strainer and into the whipping cream. Add the remaining 2 T of the lavender flowers and stir into the custard. Cover this mixture and refrigerate overnight. The next day, pour the custard through the strainer again to separate the lavender flowers from the mix. Then freeze the custard in an ice cream maker, according to the instructions for your ice cream maker. Be sure to watch the next video on how to make profiteroles (not uploaded quite yet!)
